Indian-Cupcake Baby

This weekend, my friend Cassie from high school is visiting!

Cassie, Jillian and I have been friends since the sixth grade, so with Jillian and I both at NYU, she’s getting a two-for-one deal this weekend J

Senior prom!!
I actually learned last night that Cassie randomly stumbled across my blog while looking at other cooking blogs. Funny, right?

After picking Cassie up in midtown, the three of us decided on Indian for dinner. We went to Baluchi’s in Soho. (I forgot my camera card, so these are taken with the Crackberry!)

To start, they brought us papad (lentil chips) with three dipping sauces.

Though I couldn’t tell you what was in it, I loved the yellowish one- I actually ate the remnants with a spoon. No shame.

As my entrée, I ordered extra-spicy baigan bharta (an eggplant dish). I know Gina would approve!

Cassie and Jillian got the vegetable curry and the chicken makhani.

There was also plenty of rice and naan to go around.

Is it just me, or is there always leftover rice? We barely made a dent in our two bowls!

I ended up eating my entire portion of bharta, three pieces of naan, a little bit of rice an a few bites of Cassie’s vegetable curry. Stuffed to the brim with Indian food babies, we decided to make room for Crumbs cupcakes.

The Grasshopper- rich chocolate cake filled with chocolate fudge and topped with mint flavored cream cheese frosting with chocolate cake crumbs, edged in mini chocolate chips with a vanilla buttercream rosette.

Which is really just a fancy way of saying the best cupcake ever.

Afterwards, we ended up going to the Bronx for the evening. It was a great time, though rather chilly- I guess fall is really here!

Hope you all have a great Saturday!

Do you like Indian food? What’s your favorite dish to order?

Dreadmill Run

My half-marathon training plan calls for an 8-mile run this weekend. Since one of my best friends from high school is coming to visit this weekend, I was planning on getting it done this weekend. When I looked out the window at the pouring rain, however, I knew 8 miles was just not happening.

What’s a girl to do? I ended up re-arranging the weeks in my training plan so that today would be a 6-miler on the treadmill, and I can tackle eight next weekend when I’m home in PA!

Though I hate the dreadmill, it ended up being a great run:

  • Mile 1- 8:27
  • Mile 2- 7:53
  • Mile 3- 7:38
  • Mile 4- 7:46
  • Mile 5- 7:42
  • Mile 6- 7:38
  • Total time- 47:04
  • Average pace- 7:50

Last winter, the first six weeks or so of my half-marathon training were solely on the treadmill. I’m amazed that I had the patience to run ten miles on that sucker- I definitely prefer being outside!

* * *

Today’s (rather boring) eats so far…

Kashi Autumn Harvest cereal with almond milk as a very late breakfast:

Lunch, part one (pre-run).

Salad with romaine, tomatoes, carrots, cucumbers, hummus and my last decapitated whole-wheat tortilla on the side.

PB+banana “sandwich”.

Lunch, part two (post-run).

PB on my last super-thick slice of Arnold WW bread (this was definitely two slices worth…they just forgot to cut off the heel!)

Apple + cinnamon.

I’m still feeling a bit snacky and I know this wasn't quite enough to refuel after that workout, so I see something sweet in my very near future…

Happy Friday!

Which do you prefer: running on the treadmill or outdoors? I like the treadmill because it’s easy to maintain a certain speed, but it just gets too boring for me to really enjoy it!

Heel of the bread: eat it or not? My mom loves the heel, so she always eats them at home. I’m not a huge fan, but I can’t bear to throw food away!

Thursday Dinner Club

Last night, I made yet another home-cooked dinner at Mike’s apartment. I’m really starting to enjoy cooking a full meal every once in awhile- we’re calling it the “Thursday dinner club.”

Oh the menu: Mama Pea’s tofu ricotta gnocchi, homemade marinara, a simple veggie salad and pumpkin chocolate chip cookies.

I started by preparing the marinara using this recipe. Though the instructions said to let it simmer for thirty minutes, mine simmered for almost two hours, which brought out even more flavor.

Next, I got started on the gnocchi. Since Mike doesn’t have a food processor, I’d made the dough at home and brought it with me.

Following Mama Pea’s instructions, I divided the dough into quarters, rolled it out and cut it into bite-sized pieces.

The gnocchi ended up being huge- I had trouble rolling the dough out since Mike didn’t have any flour on hand!

Bubbling away in boiling water…

Lots ‘o veg.

Dinner is served!

Because I taste-tested so many filling gnocchi and so much sauce, I wasn’t even hungry by the time we actually sat down to eat. I served myself a small portion, just to get the full effect.

These were so doughy and good. Mike was astounded that there was tofu in them! Definitely packs more of a protein punch than regular gnocchi.

On the side, I had piles of salad with salsa.

For dessert, we broke out the pumpkin cookies I made. I was absolutely stuffed by this point, so I just had half of one.

I’d stored the cookies in the fridge, which ended up being a great choice- the coldness made them extra chewy!

Any recipe suggestions for the next Thursday dinner club?
