Still truckin' along on this whole paper thing...
Seriously, sometimes I really wish I'd been in school before the advent of the internet. How the heck did people procrastinate before? When you're writing on a computer, it's just so tempting to jump online. I know there are ways to block certain websites, but there is no method to my procrastination. I'll randomly find myself looking at obscure Wikipedia entries for half an hour in order to avoid the task at hand..
I did take a few (totally unnecessary) study breaks, including one for dinner!
I made an Italian-themed veggie bowl by roasting half a zucchini, a tomato and half a head of cauliflower in olive oil and salt & pepper for about 30 minutes at 400*F. Then, I added a serving of Trader Joe's Meatless Meatballs along with some tomato marinara and nutritional yeast flakes. On the side, I had two slices of lightly toasted whole-wheat sourdough bread.
The flavors were surprisingly cohesive for such a thrown-together meal! Cooked zucchini always reminds me of grilling in the summer, when my dad slices them up and throws them on the grill with some fish. Mmmm.
I kept chomping right along with my usual apple + dark chocolate dessert- tonight's selection was another serving of Lindt chili.
I'm hoping I can finish the last three pages of this thing in the next hour or so...when I had the whole day open there wasn't much incentive to rush, but now my bed is looking mighty comfy! Enjoy your evening!
What's your favorite thing to grill? In the summer we have fish + grilled zucchini and eggplant at least once a week. It used to be chicken breasts, but I think fish is way more flavorful and summer appropriate, anyway! Peaches and pineapple are also delicious on the grill...can't wait!

Just Keep Swimming
I have to say, I'm starting to really feel the stress of the last few weeks of school. Unsurprisingly, the closer I get to being done, the more I have to do- which is awesome because it will all be over soon, but stinky because it requires herculean amounts of concentration that are really hard to muster right now. But as a very wise fish once said, when life gets you down, you know what you gotta do?
Just keep swimming, just keep swimming, just keep swimming, swimming, swimming....

Okay, rant over :) My frazzled brain cells weren't feeling too creative for lunch today, so I went with an old standby:
I slathered two slices of whole-wheat sourdough bread with Maranatha almond butter, served along with some carrot sticks and pineapple chunks.
Ooey-gooey and delicious. Nut butter does wonders for concentration ;)
I promise to return to more interesting foods and recipes once I'm done for good on May 9, okay?
In an attempt to fuel some writing, I also helped myself to a handful of dark chocolate chips and almonds. The writing was a fail, but the combination was a definite win!
Now, onto writing, writing writing...just keep writing...
What's your favorite encouraging quote or saying when you're just lacking motivation? One of my favorites is "The faster you do it, the sooner it's over." Oftentimes if I spent half the time working that I do procrastinating, I'd be done twice as fast!

Goodbye April, Hello May!
Good morning, everyone!! I can't believe it's MAY already. Every year it feels like winter lasts forever, and then the spring flies by. We're almost to my favorite month though- I love June the most!
April was a great month for me! I finally broke out of the winter blahs and had some really fun experiences:
- I went to the Vegetarian Food Festival in NYC Veg Food Fest
- I walked the More/Fitness Half Marathon
- I observed the 99th anniversary of the Titanic Sinking!
- I had dinner at Pure Food & Wine with the Pure2Raw girls
- I celebrated Easter with my family
- My family adopted a yellow lab named Maggie!
- I obsessed over and watched the Royal Wedding
I also wrote some fun posts:
- Striking a Balance (Or Not)
- Reader's Request: Restaurant Meals
- Overcoming Negative Body Comments
And created some tasty new recipes!
- Chocolate-Coconut Baked Breakfast Cookie
- Tempeh Taco Bites
- Peanut Butter Pancake Bake
- Blueberry Pancake Bake
Though April was awesome, May is looking marvelous (heh heh). It's going to be a busy month! I'll be finishing college, going to the FitBloggin' conference in Baltimore, and traveling to London with my dad. I can't wait!

I had an absolutely horrible night's sleep last night (long story), so made sure to start May on the right foot with my all-time favorite breakfast.
A big bowl of Kashi GoLean with frozen blueberries and almond milk. Always a winner!
Today is going to be entirely devoted to knocking out a 12-page final paper for one of my classes. I always work best under pressure, and I'm hoping the motivation to be done with this class forever lights a fire under me! Hope you have a wonderful Sunday.
