Scones!
Vegan Coconut Scones (adapted from Jenna's Fifteen Minute Scones)
- 2/3 c whole-wheat flour
- 1/2 c rolled oats
- 1/4 c unsweetened shredded coconut
- 1 tsp baking powder
- 6 T coconut butter (not oil)
- 2/3 c non-dairy milk
Preheat oven to 475*F. In a large bowl, combine flour, oats, coconut and baking powder. If your coconut butter is solid, heat it in the microwave for a few seconds until it becomes the consistency of room-temperature butter, then use your hands to cut it into the flour mixture. Add milk, and stir until just combined. Form dough into one large ball, and place on a baking sheet lined with tinfoil. Bake for approximately 18-20 minutes, or until top is cracked and golden and a toothpick inserted in the center comes out clean. Cut into fourths and enjoy!
This is not your typical pastry-like tea house scone, but it is delicious. The coconut gives it plenty of flavor without adding sugar, yet it's naturally sweet and healthy enough to enjoy for breakfast. I'm not usually one for jams or jellies, but a thin layer of Crofter's South American Superfood was just the right amount of sweetness. On the side, I had a rips banana for some fruit action.
