This morning I woke up feeling fine, but still a little wary of feeling sick again. I hate when you think you're better and it creeps back up on you! I started off my morning with the usual, nothing fancy:
The last of my Arrowhead Mills Spelt Flakes, sliced nanner and almond milk
I spend awhile catching up on blogs and finishing some homework, but started to get antsy. I knew I shouldn't do any intense workouts, but since I felt fine, I was itching to get moving! I'd remembered a few of my friends going to a 10 am class on weekdays at Yoga to the People, and the studio was fresh in my mind since Jaclyn reminded me of it in a recent comment. It's a studio in the East Village that provides donation-based classes. You can pay just a few dollars for a class! I've tried it before on evenings and never been a fan since it gets soooo crowded, but decided to give it another chance.
It was actually great! I felt much more comfortable with space to move in...I'm not very good at yoga, and bumping shoulders with someone while attempting to do the poses always made me self conscious. I tried to really focus on stretching, since so many of you recommended yoga to me in Monday's post. I left feeling stretched out and energized! I don't think I'll ever become a yoga fanatic, since I've tried it many times and just never fell in love, but it did help me to appreciate how great your body feels afterwards! I'm definitely going to try to incorporate it into my routine a few times a month, just to get rid of tight muscles.
I rushed home afterwards to make some lunch before heading to class. I knew I had half a can of pumpkin in the fridge, so during my walk back I invented a recipe and prayed it would turn out edible! The contenders:
Canned organic pumpkin, Pacific vegetable broth, Almond Breeze and cinnamon
I combined half a can of canned pumpkin, 1/2 c vegetable broth, 1/2 almond milk and a dash of cinnamon and heated until warm. Meanwhile, I steamed some carrots in the microwave and then chopped them up to add for extra texture and veg:
When I tried the soup, it was a little lacking in flavor, so I decided to wing it. I added a drizzle of olive oil...better, but still not there. Then, I had a stroke of genius:
Maranatha Almond Butter. Lifesaver.
I melted a spoonful of AB in the microwave before adding it to the soup and giving it a good stir. The verdict? Exactly what it needed. It turned out great! Every time I experiment like this, I'm reminded of how easy cooking can be!
Enjoyed with Mary's Crackers and an orange, which I swapped for an apple at the last minute because it was less messy to eat and type at the same time :) Nom nom nom.
After lunch, I skiddadled to my afternoon of classes. On my way, I realized I forgot my water bottle and stopped in a deli to grab one. Look what I found!
Kitten! The deli dude said he was watching it for his girl friend and called it a "pain in the ass." How can something that cute ever be a pain, anywhere?! Made me smile :)
Later, I munched a Larabar between 18th c French Lit and Paris in Art, History and Literature:
Peanut Butter Cookie Larabar
And some unpictured raisins during Paris. I've found that raisins are the perfect in-class snack: the box makes no noise when you open it, and they're chewy, so you don't annoy everyone with your crunching!
I came home, went to a quick mandatory meeting with my RA (ugh...I hate dorms), and made a monster tupperware salad for dinner. A lot of my toppings got lost in my mountain of spinach, but lots of greens is how I like it!
1/2 block Lightlife tempeh, spinach, tomato, steamed Asian blend frozen veggies, sliced green olives, red wine vinegar, EVOO and nooch; Ezekiel english muffin with hot sauce and an orange on the side
After my tum was satisfied, I buckled down and wrote my French paper. 4 pages in two hours, baby! While working, I had a bowl of Envirokidz Peanut Butter Panda Puffs with applesauce and cinnamon:
Is it weird that I chose the Panda Puffs over Leapin' Lemurs solely because the pandas on the box were cuter?
In other news, I wanted to say thanks to Ashlei at the Vegster and Susan at Tangerine Trees and Marmalade Skies for both giving me the Sunshine award! I'm supposed to tag bloggers who bring sunshine into my life, but as I've said before, it's impossible for me to narrow it down to ten! On top of being the most indecisive human being in the world, every single one of you brings so much sunshine into my life on a daily basis. It sounds so corny, I know, but just the other day I was thinking about how much you've impacted me in the short time I've been in the blog world. I know that it might not always be as easy as it seems, and that many of us have our "issues" when it comes to certain foods, but I truly believe that in reading your blogs every day I've come a long way further in accepting a balance of health and happiness. If I want to eat calamari, I'm going to eat it, and enjoy every single delicious, fried bite!
Well, it's been a long post and I still have some work to do before getting to bed early! Hope you all have an amazing night!
What's the best impromptu creation you've ever whipped up in the kitchen? Today's pumpkin soup was definitely one of my tops!

OMG kitten!! good for you for not feeling guilty post calamari, that is awesome! blogging is seriously magical, i don't care how dorky that sounds. not weird at all that you chose your cereal based on cuteness. though i think lemurs are pretty darn cute, but in an ugly-cute kinda way. omg we have a yoga to the people inberkeley just 2 blocks from my apartment!! i'm actually going to do a class there as part of one of my real classes, it's an integrative medicine course so we have to go out into the community and do diff types of things, taking a yoga class there is an option!
Yum!!! What a successful kitchen experiment!!
And that kitten is TOO cute! :-)
this totally made my day:-)especially the whole thing about your eating more and still maintaining (its amazing how our bodies adjust) and not feeling guilty. thats whats life is all about.not getting caught up in weight and food and cals.
hmmmmm lets see, i make a pretty mean banana bread!
snow this weekend! ahh...when are you going to CA?i have midterms for the next two weeks-shoot me now-, but after that, im all yours! lol ok that was corny. well, anywho, ill be freeee to meet up. xoxoxo
Raisins are the perfect idea for class snacks! I love the PB larabar. It's so decadent! (It's really good frozen!)
I discovered indian cooking with impromptu meals & fell in love. It's so much fun!
I'm so glad you feel like you've become more comfortable in your eating. You eat so well and should definitely enjoy a calamari festival!
And I love your soup for lunch! How creative are you?!?
Yoga is amazing, I'm working on going more often! Have a great night!
That is definitely a cool creation! Love the addition of the almond butter...I make lots of impromptu creations, but I can't really remember them! But one of them was kinda like yours...sweet potato stewed in coconut milk with PB!
I'm so glad blog-reading has helped you :) I think it can either be a blessing or a curse as far as ED is concerned.
Good job on the soup! You can never go wrong with pumpkin + pb
And kittie = no pain in the ass ;)
Aww girl, so happy that blogging has had that effect on you!!! And I agree with you. My guilt has lessened SO much. So very much. Calamari is awesome... would be a shame to NOT eat it!!! Life is too short for guilt and crappy food.
Your soup sounds amazing!! The best creation i've ever had.. probably the blueberry pancake roll ups that I blogged about tonight. Delicious!!
The kitten is ADORABLE!!!!! Please tell me how that could be a pain.. too cute!! :D
oh gosh that kitty is sooo pretty! I guess if you were working it would be a little hard to watch a cat...
Wow what an awesome creation... my random creation really was not that creative at all but included soy milk:plain, Cultural Revolution 2% raspberry yogurt, 1 T Bob Mills protein powder and ice blended into a nice smoothie!
Ah food guilt.. isn't it awesome when a negative food thought does not pop into your head!
I always hated those mandatory meetings with RAs. As much of a pain as living off campus can be, it's nice to have a certain amount of freedom.
I made a pretty fantastic curry soup the other night for dinner. It's always amazing what you're able to come up with when you have a few ingredients that you want to use!
Almond butter saves the day for the 34572243rd time! I'm telling you, it's magic. :)
I used to choose EVERYTHING based on how cute the outside was...ie. tshirts (fine, when i liked sparkly pink everything, haha)...food? not so fine. packaging can be sooo misleading and I've realized to try everything in small doses if I find...before getting bulk of things I really, truly love :D
wow that was INSANELY creative of you :) how fun is that! i don't think i could ever come up with something that creative haha. i just usually put a whole lotta junk in a bowl and call it a meal. creative? maybs!
congrats on the awardy!
Glad you're feeling better! Your creation looks delish :-) My favorite quick creation would have to be cottage cheese in pasta sauce. It tastes like lasagna and makes the sauce super creamy.
Have a great night! xoxox
Good for you for enjoying your fried goodness! Who cares if it's one meal?? Worth it! Everyone should treat themselves! I have loved reading your blog, and I'm so glad it has helped you out! xoxo
That kitten is so adorable! I don't like it when people make nasty comments like that. If a guy doesn't like cats, then screw him! He'd never be any "boyfriend" of mine! ;)
wow so creative w. the soup girl!!!
any kind of pizza i make is usually an odd creation, i throw whatever on it!!
your kitten is soo cute :) im a dog girl but i do like kittens!
I'm not really an impromptu kind of cook...but I can tell you I tried to be impromptu with a stir fry over the weekend and it was GROSS. lol I can't believe the guy called that little puff ball something mean, it's so cute and I usually don't like cats! Love the part about not feeling guilty..when I first started dieting/learning to eat healthy..going out to eat was a huge issue, but now I've learned to enjoy it!
Yoga to the People, and that you actually went to THE STUDIO is pretty amazing as they have their podcasts on itunes and it's a very popular download, and you actually went there...cool! You may not ever turn into a pretzle or a zen mama but hey, you're trying, and you liked it well enough, that's all anyone can ask.
The award. Congrats.
Not feeling guilty about enjoying food. Amen, that's a beautiful thing, I am so happy for you!!!!
xoxo
I love that salad creation. Looks awesome!
Congrats on:
-making your own recipe
-getting some good work in on your paper
-and most of all...NO GUILT!
Woohoo! So proud of you, girl! :D
I started my yoga practice at Yoga to the People and that's where I fell in love with yoga! But it took me 3 years!!! It's totally a crazy experience when it gets so crowded, but you just have to embrace the crazy. Try to get a spot along the walls, you have a little extra breathing room that way. Yoga is so good for your body, and once you click with it you will really enjoy the experience.
If you're feeling really brave, YTTP opened up a bikram studio on 27th Street. It's less crowded and it's a different experience, but I started to really like bikram and am practicing in Chicago now as well.
Glad you're feeling better!
Congrats on the pumpkin soup creation--sounds divine! I have been experimenting a lot with barley lately. I made some for a recipe and it turned out to be a much bigger quantity than I thought, so I have a TON to use up. lol.
I loved what you said about the bloggie world encouraging healthy habits and feeling guilt free when enjoying your food. I still have a long way to go on that, but I agree that the support we receive from our friends here is of immeasurable help. Loves ya! xoxo
Sooooo glad you are feeling better girl !!!
Oh the coconut butter is HEAVEN!!!!!!!!! I had some spread on a cran bran vitatop this morning and I was loving every bite!!! I could eat it out of the jar!! Not going to though, lol!!
Love ya girl and how adorable that cat is : )
Oh and I so would buy the panda puffs because the pandas on the box are way cuter!!
xoxoxo
All of your eats today look so delicious that I feel like inviting myself over lol :P I'm so jealous that you went to a yoga to the people class, I LOVE their podcasts!!! I'm still not advanced to know what all the poses are though so I always have to pause and google the poses :P
The last impromptu thing I did was last night's snack: some wheatberries with unsweetened almond milk, cinnamon and a teeny bit of agave. Super yummy!
YA YA for a great recipe!! I LOVE it when "in-the-head" creations work out!! and that kitten is soooo adorbs! I want it! :) sooo glad to hear that you are feeling better, perfect timing cuz it's almost the weekend! whoop whoop! I hope you have a great thursday loveeee! xoxo!
Oooh, great idea on the soup! It sounds (and looks) so good. What CAN'T almond butter do?
Cute cute kitty! You're right - how can a kitten be a "pain in the ass"??? Silly man.
You ARE a little ray of sunshine and I love it!
I also love your cereal ways. It's the best.
What a bossy soup! Looks like someone knows her way around the kitchen.
Which, btw, do you have a kitchen in your dorm? How do you store all your produce? I only had one tiny mini fridge and a microwave!
Anyway, so glad you are feeling better! Have a marvelous weekend, darling! xoxox
glad you are feeling better today! I love soup and yours looks really good :)
hmm my quick creation.. its tough cause if I am hungry and don't have time I go to one of my 3 choices, oats, salad or almond butter sandwich.
I JUST bought some panda puffs (because of the box) LOL. They are the best.. they are light and airy!
Have a super, day! :)
That is the CUTEST kitten ever!!! My favorite spur of the moment meal was "Chicken Malbec" I leftover Malbec wine, mushrooms, spinach, walnuts and goat cheese so I decided to prepare the chicken much like a Marsala and place it on wilted greens dousing it in cheese and nuts! SO good! I like experimenting too...It's how you learn!
Your pumpkin soup looks amazing! Honestly my biggest kitchen whip-ups have been involving coconut kefir and then whatever else I have on hand! Carob and mint have been hits for me ; ) Love anything chocolate and mint! But now craving pumpkin!!
mmm those pandas look So good! they remind me of kix and totes gofor it bc the pandas are cuter ;)
pumpkin soup sounds awesome! perfect for a rainy day here in boston!!
peanut butter cookie lara is awesome!! have you tried the banana bread, thats my FAV!
aawwww sssoo cute! i agree, nothing that cute could be a pain in the ass. Adorable. Your pumpkin soup sounds awesome hon! Yum!! My fav. improptu is just something simple. I throw whatever veggies I got lying around, some sort of protein and spice it up. Easy and fast din! Have a rockin day!!!
I do a "leftovers" soup sometimes before heading out to the grocery store. I use up the little bits of leftover vegetables and whatever else I have in the refrigerator or pantry that could be added. I hate throwing out food.
glad youre feeling better. nice little pumpkin soup combo. i WISH i liked yoga but would def. not be down with a crunched in studio. No thanks!
