Bonsoir mes belles! I’m writing this from the exact same position as last night’s post- on my big red comfy couch, with some Real Housewives blaring and some snackage going. I promise I’ve gotten up since last night J
This morning I took full advantage of not having roommates to wake me up or classes to go to, and slept until the glorious hour of eight. Not late for most people, but I’m an early bird! I made a supersized cereal bowl:
Fiber One with a sliced nanner, almond milk and cinnamon
I was super excited to take Garmy for his first run! Unfortunately, when I went to check on him in the corner where I’d plugged him in…the screen was blank. WTF? I unplugged the charger and put it back into another outlet. Success! Apparently I had a seriously blonde moment last night and plugged it into a non-working outlet. Yeah, I’m intelligent.
Since I’m dying to try it out this weekend, I decided to switch my cross-training and run days and go for a run tomorrow. Instead, I did an hour on the elliptical in my garage while watching old episodes of Gilmore Girls on DVD. I forgot how much I love that show! Back in the day, all I wanted was a Dean to my Rory J
For lunch, I made a Mediterranean salad inspired by my favorite Eva’s creation:
Romaine, tomatoes, carrots, sliced black olives, capers, minced garlic, Veggie Patch falafel balls, Sabra sun-dried tomato hummus and oil & vinegar, with Rice Works Sea Salt pita chips and red grapes
The star of the show was definitely this:
Sabra Sun-Dried Tomato Hummus = new favorite hummus of all time. Seriously, if you’re a hummus freak, try this flavor!
I spent the afternoon doing some reading, but took a break to bake some granola from The Kind Diet, which I’ve only paged through but loved so far! The recipes seem great, and there are tons of mouthwatering photos. Since I didn’t have all the recipe’s ingredients on hand, I improvised a bit:
Melted coconut oil, sunflower seeds, unsweetened shredded coconut, chopped pecans, dried blueberries; coconut oil, vanilla extract, maple syrup and turbinado sugar

After snacking on bites throughout the cooking process, I knew I had to sample some with my afternoon snack! Not to toot my own horn, but I came up with a seriously incredible baked apple creation:
Jonagold apple, cored and microwaved for 2 min in ½ c almond milk, with a handful of granola, sprinkle of cinnamon and spoonful of PB&Co. Cinnamon Raisin Swirl
This was SO GOOD! After I took a picture, I mashed it all up with a fork. The peanut butter melted into the almond milk, which infused the granola and apple. (When I use words like “infuse” to describe a snack, you know it’s a foodie win):
For dinner, I made something I’ve been wanting to try for awhile: spaghetti squash!
½ spaghetti squash, topped with EVOO and fra diavola pasta sauce, with a side of roasted brussels and asparagus
I loved this stuff! So filling but not heavy. The spicy fra diavola complemented the sweetness of the squash perfectly! My dad had a bite and gave it a thumbs-up as well. For dessert, I had something you’ve all seen before:
Jonagold apple with Nuttzo for dipping
Since then, I’ve been procrastinating starting a paper by watching reality TV and munching on CIAJ- cereal in a jar!

Hummus = Basha! I think it's a Michigan brand but it's so creamy and delish, I'd eat it by the spoonful.
Mmm I love your Mediterranean salad- chock full of some of my favorite ingredients!! And so pretty! And I think my favorite hummus is Tribe Original. I'm so plain like that!

I like hummus but my tummy does not so i dont eat it. I like the homemade dressings i make but back in the dairy eating days i loved me some spinach and artichoke dip..there are vegan versions of it, but yeah, i dont bother :)
My grandfather made the world's best hummus. I think it had to do with his ability to somehow whip cloves of garlic into a cream.
He was always in charge of the hummus at our family get togethers.
He was Lebanese, FYI.

My favourite brand of hummus is a creation from my fave Raw/Veggie take-out spot: chickpeas, olive oil, tahini, lemon juice & sea salt - just the goods:)

WHAT a crazy but delicious afternoon apple snack. I love warming up my apples but have never thought of doing it with milk.. MUST TRY SOON.

I love love love Tribe 40 Spices hummus and TJ's Tuscan White Bean hummus. I haven't met a hummus I don't like, but those two are my faves for store-bought.

I love Sabra's spicy hummus--Sabra anything, really, because it's so creamy. I don't know if you've ever been to the Hummus Place in the East Village, but they have this amazing hummus with full chickpeas dotting the surface; it's by far the most delightful thing you can get for eight bucks a pound.
Umm that baked apple.. YUM!! I will have to try something like that asap! And I love PB & Co.'s cinnamon raisin, it was the first PB & Co. product that I tried.

Oh, how I miss Gilmore Girls! Dean was the fulfillment of every middle school fantasy I ever had, haha. And, I HATE charging things only to realize that they're not charged at all... SO frustrating.

My favorite brand of hummus is Fontaine Santé which I think is only found in Canada... anyways it's REALLY really good. I actually don't like Sabra hummus that much, I find it a bit dry... but I tried the plain kind and all the other ones DO like a lot more appetizing ;)
Oh, gosh Real Housewives is a hot mess! I LOVE IT! Haha! Those women are insane! I'm all about that Mediterrainian salad, girl....sounds soooo good! And that granola? Sounds divine! Those are some of my favorite ingredients. I've also been wanting to try the spaghetti squash since I've seen it done so many times. It seems so easy! My favorite brand of hummus is Sabra all the way! It's a tie between the roasted garlic and roasted red pepper....drool! Have a great rest of the weekend, beautiful :-)

So far Sabra is my favorite brand of hummus. I haven't tried a flavor that I don't like.

And our foodie twin-ness stops here...I love ALL Sabra Hummus, but Sun-dried tomato is my least fave of all the ones I've tried. I'll eat it, but its my last choice.

Mmm! So much peanut butter goodness in this post! I loooove baked apples. I ate a ton of them this fall after our apple tree was harvested. I never had them with pb though--sounds delightful!
