Ch-ch-ch-chiaaa!

Salut mes petits choux! (I've been feeling particularly francaise all day...I think this girl's awesome posts might have something to do with it!) It’s been a pretty interesting day for me food-wise, so I’ll get right to it!

I woke up at six to get a workout in before class. On my way out the door, I ate a S’Mores Luna Bar (sorry for the bad pic, I had to use my flash in a dark room!):

I’ve never met a Luna I didn’t like, and this flavor is no exception! Perfect pre-workout fuel. At the gym, I did 7 miles on the elliptical in an hour and some change. My training plan includes race-effort cross-training to keep up my stamina while giving my knee a break!

Breakfast was the last of my Nature’s Path SmartBran cereal, topped with frozen strawbs and almond milk:

Before I left for class, I decided to get a little creative and make some chia pudding-slash-overnight oats to incorporate into my lunch somehow. I combined ½ c rolled oats, ¼ c chia seeds, and 1.5 c almond milk and left it in the fridge for about three hours. When I came back from class, I was super pleased by how well it had turned out- a nice, puddingy consistency with a definite chew from the oats. The trouble came when I added some mix-ins!

The dry ingredients were definitely the downfall of this lunch, since as soon as I added them, it became super thick and difficult to blend. Not one to waste food, I ate it anyway! I have to say that the flavor combination was great- the maca gave it a nice malty flavor, which was balanced out by the blandness of the oats, the sweetness of the banana and the saltiness of the PB. The texture didn’t bother me at first, but halfway through the bowl, it started to gross me out. I performed emergency surgery with another half cup of milk, plus a spoonful of melted Naturally More. Definitely an improvement, but I still had trouble enjoying the chia consistency- next time I need to use less, especially if I’m adding oats as well! I also had some unpictured baby carrots with lunch.

Later in the afternoon, I was craving carbs after a very long and boring science lecture:

Not long after, I noticed I had a package notice on my door! Receiving mail always gets me excited. I was even more excited when I picked it up and realized it was from Liz!

Best package ever! She sent me 2 PowWow bars, gum, raisins, a few cute headbands she made, a sparkly pen, and a sweet note! Of course, I wanted to break right into the PowWows, but decided to wait until after dinner as a non-dessert J

For dinner, I met Jillian at Eva’s and got my absolute favorite salad. Seriously, I have dreams about this combination! I got the non-dairy vegetarian super salad, which has hummus, eggplant salad, falafel balls, stuffed grape leaves, black olives, tomatoes, escarole, and brown rice, all tossed in balsamic and EVOO and served with a pita. I didn’t snap a pic, but here’s one from the archives:

Definitely one of my favorite dinners ever! It was made even better when I came home to a PowWow bar for dessert:

Won’t Make Your Monkey Chunky bar

Holy yum was this good! Super moist and peanut buttery, with a subtle banana taste and big chunks of peanuts. It tasted like peanut butter banana bread! Amazing!! Liz definitely has a calling in making these…thanks again girl!

One question I wanted to ask all of you is whether you use Ecto to write your posts. I’ve been seeing it mentioned all over the blogworld lately (usually with problems attached, though!), and I’m wondering what exactly it is and how it’s better than regular Blogger posting. Any input would be appreciated!

What’s your favorite salad combination? Mine is definitely the Eva’s I had tonight, but I also love any salad with tempeh in it!

the powow bar looks delicious!! and yay for the sweet package :) lovee the look of the bread with sunflower seed butter- i really want to try that!! love mediterranean food too :) what is ecto?? i dont use it!! haha

I have seen etco mentioned around the blogworld too but have no idea if its good, what I have read people were not liking it and had problems!!!

too funny you love those ginger chews too and your mom gets them!! They do get stuck in your teeth, lol!! Worth it though like ya said!!!!!!

Your salad sounds to die for!!! Yet I have never even tried half of those components... like falafels. What do they taste like?
My favorite salad is simple - leafy romaine, grilled chicken, avocado, tomato, croutons, and maybe throw in some other veggies ;)

I use Window's Live Writer for my blog posts and I LOVE it. I haven't had a problem yet (knock on wood!).

that salad sounds amazing! i used to go to NYC all the time when i was working in CT and dating a guy up there for about a year and i still miss the food/restaurants terribly. i put in for a transfer and almost moved there i was so in love with the city (obvi didnt work out)... ahhh i love reading your blog and thinking back to fun memories :)

Yes, see with these chia seeds, I can only take so much. Definitely give just a tablespoon a try and I'm sure you'll be much happier with the results.

The salad you had is definitely my fave kind of salad, too! Completely Greek and completely amazing.

the salad combo..anything raw, fresh, crunchy. i really hate wilty soft veggies..haha!

ecto. i tried it twice about 4-5 mos ago, it ate 2 posts. it also required me to upload to flickr first which for me was a total extra annoying step. i am on a MAC so no windows live writer for me. so ecto sucked and LW is a no-go. so i do blogger's compose screen and it sucks but there is nothing better unless ecto and i were just having a moment. lmk what you end up doing!

I've never actually tried tempeh before, except in an Indonesian gado-gado salad...but that was when I was a kid, and I picked around it!
I like my salads with candied nuts, strong cheeses, and tuna salad dollop on top!

That salad looks AMAZING. I've recently become obsessed with a 'cheeseburger' salad - totally vegan, don't you worry. I throw a ton of greens together with a chopped up veggie burger, diced onion, relish, tomato, celery, cooked sweet potato chunks, and plenty of ketchup, mustard, and nutritional yeast. Kind of gross, but totally delicious.

Yuuuuum to the salad! My favorite salad was one I had on vacation with Ahi tuna, peanuts and a miso dressing. It was perfection! I also love a good greek salad. I just had the S'mores bar yesterday and loved it...along with all the others. White Chocolate Macadamia is tomorrow. You tunred me on to that one and it's my fav!

My favorite Luna Bars are the chocolate peppermint and raspberry chocolate flavors. So Nummy! Maybe try soaking the chia seeds separately first next time? And good luck with all the homework, I'm feeling you on that one. Ick!

That salad looks BOMB! My favorite combo would be a "taco: salad: black beans, salsa, br. rice, dallop greek yogurt, avacado, and some flax/veggie chips.

I don't use ecto but am also curious about it! Question pour tu: maca--i've been dying to try it, where did you get yours? i've checked at whole foods and no luck!

Thanks for the great "frugal" tip - I love the convenience of frozen fruit and veggies, so I will make more of a point to stock up.

I saw the chia pudding oats and thought, "That looks delicious!" Then I got to thinking; to a non-food blogger, it would probably look weird and kind of gross, right? It's funny what this blogging world introduces us to :)

Smores Lunas are my FAV! YUM! My favorite salad is totally unhealthy! It is from a little BBQ place in Florida. It's just a normal garden salad with pulled pork on the top. Plus some Alabama white sauce for dressing... Alabama white sauce is just mayo, vinegar, sugar, and spices. I ate it a lot when I was pregnant the first time... No wonder I gained so much weight haha :)

I've never seen those bars before... I swear I can't find half of the good stuff I see on blogs around here. I guess I need to move!

There were so many PB & Co flavors to choose from I almost bought them all at once. What's your favorite? Do you have a Walmart in New York? haha Paper Plates GALORE in that place. I also think one of these days you are going to have to give me a blogging tutorial. I can't figure how to link sites on my page, show the people i'm following, nothing! Slowly but surely..
