Half Baked

Hey bloggies! Hope you’ve all had a great Thursday! I just got back from a date night with my friend Jillian…and am totally full with the world’s most delicious cupcake J First things first, though!

This morning I woke up early and had a pre-workout snack of an banana and a piece of women’s bread before hitting the gym. I did an hour on the elliptical at “race pace” for some cross training- 6 miles in 54 minutes, plus stretching. I came home and had a breakfast of the last of my Kashi GoLean with blueberries, plus wayyy too much almond milk. I got a little overzealous pouring, clearly:

After my first class, I was seriously craving my favorite tofu sandwich. I gave in and stopped by the deli for one, along with a Greek-style veggie salad in oil and vinegar, some fresh watermelon, and an apple from home:

And some chocolate protein cookie dough for dessert!

The rest of the day was fueled by a massive chocolate craving. I had a Cookies n Cream Luna bar as a mid afternoon snack, hoping to tame the beast:

No such luck. Attempt #2 came in the form of some Lindt 85% dark chocolate:

Another fail. I met Jillian for dinner at Cosi, where I enjoyed my usual choice of a hummus and veggie sandwich on their amazing flatbread, along with some unpictured baby carrots:

The highlight of my day was definitely dessert. I haven’t been to Crumbs Cupcakes in ages, so Jillian and I decided that a trip was in order. Enter: the Half Baked Cupcake.

Marble cake filled with white buttercream, topped half vanilla cream cheese frosting and half chocolate fudge mixed with brownie pieces and covered with chocolate chip cookie and brownie pieces.”

Holy foodgasm. I don’t indulge like this very often, but it was worth every delicious, sugar-laden bite. This puppy is like the holy grail of cupcakes!

I hung out with Jillian for a bit in our sugar-induced comas before coming home. The forecast is predicting rain for tomorrow, but I’m hoping it holds off for a training run!

I also posted an Operation Beautiful note today between classes. My goal for the last few weeks of school is to post one every day- I love the message, and it’s such an easy way to make someone else’s day! Hope you all have a great Friday!

Holy mother of cupcakes... that cupcake sounds AMAZING. Wow. I'm now going to add that to the number of reasons why I'm jealous you live in NYC ;) Seriously, that would be totally worth every single bite, yum!
All of your meals sound really fabulous today though, I have to say! Especially the tofu sandwich, never thought I'd say that lol Looks deeelicious!
Yay for Operation Beautiful!! I have never posted one before but I really want to! You're right, it's such an easy way to make someone's day!

In respons to your comment on my blog post, THANK YOU!!! I can't tell you how much you have encouraged me throughout this whole injury and how glad I am to have "met" you! And Quaker oatmeal squares, hard to describe.. they don't really taste like oatmeal persay. They come in different flavors, brown sugar, maple, and cinnamon. They are kind of subtly sweet to me and are just..yummy lol I know that made no sense but I love them! And it's one of the few cereals that keeps me full for a long time, even more so than Kashi Go Lean! You should give them a try :)

Have a great friday, love you girl!

I'm not a huge cupcake fan...but it I were, I'd like to have a green tea cupcake with adzuki bean frosting, and peach filling inside...

I say you can never have too much milk in cereal! That way, when you run out of cereal, you can just add more. It's like having multiple bowls of cereal at once. Wow, really deep Caronae. Really deep.

I actually indulged in Crumbs this past weekend! I had the Smores flavor. I love cupcakes and there are so many in the city to try! We'll have to go cupcaking together sometime :)

Carrot cake, OBVS!!

I didn't see the 'friend' part at the top so I thought you were referring to Jillian Michaels the whole time :) You started with your workout so I thought you were thinking of JM for inspiration or something. Then I saw the cupcake and knew it was not Jillian Michaels hahaha.

That cupcake looks heavenly though. Who would have thought of such a thing?

Cosi flatbread is the SHIZZZZZ!

Oh, cupcakes! How I love them! My favorite cupcake is "Wedding Cake." We have a gourmet cupcake shop in Chattanooga (Gigi's), and they have the BEST buttercream icing. Just thinking about that fluffy white cake with THICK buttercream icing makes me want one right this very second!

I am a sucker for traditional red velvet cake--the kind made with beets (so it's not very red, but VERY flavorful). Though gingerbread is never a bad choice.
