Brownie baking

Bonsoir mes belles! Hope your week is off to a terrific start...the worst day is already over, so it’s all downhill from here!

I didn’t intern today, so I got to “sleep in” (until 7…living on the edge here) and enjoy a leisurely morning. Breakfast was a bowl of Nature’s Path SmartBran with blueberries and almond milk:

It was gorgeous out today- mid seventies, clear skies, a slight breeze and barely any humidity. Perfect running weather! I completed 6 miles in a little over 55 minutes. It’s been awhile since I got my run on, so it felt great to be back at it!

When lunchtime rolled around, I was craving something sweet and cold like crazy. A yogurt mess sounded perfect! This bowl contained a container of So Delicious vanilla coconut yogurt, Nature’s Path kamut puffs, two apricots, half a pint of blueberries, and a blob of Naturally Nutty vanilla sunflower seed butter on both the top and bottom for maximum nut-butter blendability:

I also had a few ginger chews, which I know Katie will love!

This afternoon I spent some time in the kitchen baking up a storm. I’m headed to a friend’s house to watch The Real Housewives of New Jersey tonight, so I baked some of Julie’s red velvet brownies to take with me:

I also got creative inventing a recipe using some Trader Joe’s peanut butter filled pretzels I picked up on Saturday. I’d remembered seeing a recipe on VeggieGirl for vegan blondies, but since my only vegan yogurt left is a passionfruit flavor, I decided to just wing it! They turned out dense, moist and delicious. Here’s the recipe!

Peanut Butter Pretzel Blondies

  • 1 c creamy peanut butter (I used PB&Co’s Dark Chocolate Dreams, which explains the brown blondies, but if you use regular PB, they’ll be “blonde”)
  • ½ c unsweetened applesauce
  • 1 c brown sugar
  • ½ c non-dairy milk (I used Almond Breeze unsweetened chocolate)
  • 2 t vanilla
  • 1 c flour
  • 1 t baking powder
  • 1.5 c Trader Joe’s peanut butter filled pretzels, crushed (about 40 pieces)

Preheat oven to 350 With a fork, thoroughly mix peanut butter, applesauce and sugar. Add all remaining ingredients except pretzels and stir until well blended, being careful to scrape the bottom of the bowl. Stir in 1 cup of peanut butter pretzels before transferring to an 8x8 pan prepared with nonstick spray. Top with remaining pretzels, and bake for 20 minutes, or until toothpick inserted in middle comes out clean. Allow to cool completely before cutting into squares.

As the applesauce and whole wheat flour suggests, these are definitely healthier tasting than an ooey-gooey butter filled bakery confection, but they’re a yummy treat nonetheless! I sampled one heated in the microwave for 20 seconds, and it was super moist and peanut buttery without being cloyingly sweet.

I ate plenty of batter and bites while baking, but I also snacked on two small peaches to balance it out.

Later in the afternoon, I headed to Plato’s Closet to unload some old clothes I don’t wear anymore. I’m kind of bummed that they barely took anything, but I guess that’s what happens when you wait until things are three years out of style to get rid of them! I did manage to make some money though, so I can’t complain.

For dinner, I was craving veggies and seafood! I made a salad beast using romaine, cucumbers, plum tomatoes, carrots onions, and a can of salmon mixed with Cedar’s hummus. An apple and unpictured pita rounded out the meal.

For dessert, I had small portions of both brownies. This is where the picking test will come in- normally I can’t resist slivering away at baked goods, but I’m hoping that since I allowed myself to try a serving of each, I’ll be able to stay away! (Last night went well again- I snacked on a bowl of cherries and grapes).

How often do you clean out your closet? Do you try to sell them to consignment shops, donate them, or throw them away? My mom hates it when I get rid of things, so I can’t weed through my closet nearly as much as I’d like to. We usually take things to the consignment store first, then donate all the leftovers to the Salvation Army.

What’s your favorite kind of brownie? I like mine moist and fudgy…even better if they have peanut butter!

Peanut Butter Pretzel Blondies? Seriously?! They sound SO good. I'm definitely more of a blondie fan...not a huge fan of chocolate :/

I usually weed out my closet once a year around garage sale time. And I definitely agree that moist and fudgy brownies are the way to go!!

I actually just went through alot of old clothes and I give them to a couple girls that my mom knows that are around my age, they really appreciate the clothes and I love giving them to them!

Ugh, I have to go through my closet. I've never made money from my old clothes as I usually just donate them to thrift stores or salvation army.

I'm not usually a fan of red velvet cake, but red velvet brownies I may have to try!

I definitely love moist and fudgy brownies too! I've also made veggiegirl blondies with much success...mmm. And I am making brownies as I write this...what?!

My mom has a vintage clothing store so our whole house is like a consignment shop (closets and racks in the basement). I tend to not get rid of stuff enough but donate it to the salvation army if we can't sell it.

I have to clean out my closet So so badly, too. Nice, brand-name, good condition clothes I try to sell...and nice clean & good condition clothes that maybe aren't necessarily trendy I donate. I guess that sounds kind of awful, but hey - I spent a lot of money and I'm a poor college kid, lol.

Even though I hate clutter, going through my closet is way up there on my list of things that I don't like to do... which would probably explain why I only do it like once or twice a year. I've never actually tried to sell my old clothes; usually I just give them to my younger cousins or donate them to some charities. I'd love to be a little more creative and try to make new things out of my old clothes, but I don't think my talents lie in fashion design; I guess I'll stick to cooking and baking (your brownies look amazing by the way).

Plato's Closet really only takes my american eagle/hollister/abercrombie stuff, and since I wear mostly other clothes now it really doesn't pay off for me :( I just generally donate huge bags of clothes to the goodwill now.

Your food always looks so good! I love a turtle brownie but I usually buy the No Pudge brand and they are great!
Platos closet.... i don't think they give enough back! I took in something from Gap that was a little over a year old but still had tags and they wouldn't take it. C'mon! I would buy something from two years ago if I liked it!

as for brownies...
fudgy all the way! I like fudgy over cake-like brownies- if they are cake liek i feel like they might as well be chocolat emuffins (which are good too, dont get me wrong!! )
but i might have to try your brownie recipe.. i love baking with applesauce & peanut butter :))

plato's closet, i have sold things to them before and also to shops like that. but, those places pay pennies on the dollar, i.e. bebe shirt that was $79, you get $8 cash or $10 store credit but its better than nothing

i sell what i can, donate the rest, and before our move to AZ, i unloaded a TON of stuff. as in 80% of all my material possessions from irons to shirts to patio sets. donate, craiglist, ebay, whatever i could do

I LOVEE making brownie s'mores. homemade crust, homemade batter with a marshmellow on top. it's heavenly and the perfect mix of textures and flavors... in my opinion haha.

Everything looks delish. I have that veggiegirl recipe bookmarked from more than a year ago! Must try it.

I just took some clothes to buffalo exchange a few days ago. They took some of my things, but I bought a shirt, so I ended up paying them in the end. I did give them a new designer blazer with a price tag of over a thousand on in, and my stuff ended up being priced at fourty, so I'm a tad skeptical. I think its better to save buy buying used clothes rather than earn from selling them.

i need to start baking vegan desserts-- those look great! i clean out the closet about twice a year and donate things. its amazing how much clothes i can acquire and never get rid of...or wear for that matter!

I'm cleaning out my closet RIGHT NOW. I took a break to blog/read blogs. Haha.
Whatever kind of brownie, I like the edge. I have a favorite use for the boxed kind, where I cook down strawberries into a syrup and fold half of it into the prepared mix, mixing the other half with melted chocolate to glaze the top. Absurdly decadent, absurdly amazing. I haven't had success doing it with a non-boxed brownie recipe yet but maybe one day.
You have to stopppp with the chocolate+pb confections! It's killin' me! My favorite flavors!

Holy YUM girl!!! Those brownies look soooooo good!! I'm all about fudgy ooey gooey chocolately brownies.. delicious!! Have you tried Veggie Girl's Fig Blondies (or something like that).. they are incredible!!

Since I'm moving in a month, I'm trying to clean out my closet and get rid of things that I absolutely don't need...but it means that I feel like I can buy new things since I have all sorts of space. Not good!

I like my brownies to be underbaked and gooey. My mom likes hers to be well-cooked, so we often have disagreements over baked goods.

Some people might argue that I have hoarding issues. Obviously I disagree, but I do have (and wear!) clothes from middle school. As in I never clean my closet. Hey if it fits and is still in style, why not?!

ahh, all that baking! looks good (but dangerous! haha).

I made brownies with pb before for a BBQ. I was too sick and couldnt taste them though :(

I think hoarding is DISGUSTING. I throw away anything and everything I can. If I think they are salvageable, I always donate to Salvation Army.

I tend not to get rid of any of my clothes post junior high because I tend to still wear them. Also none of them were ever the big trend or "in style," therefore they never go out of style either! That's my big secret haha. I share the closet with my younger sister and she has a loooot of clothes, which we're currently weeding through. I think she's planning to try and sell it on craigslist, and what's not gone by the end of the summer will just be donated.

I hear ya on the 7am sleeping in! i work 2-3 times a week at 5am (have to BE there at 5am) so 7 am is truly sleeping in for me indeed!!!

When I lived at home I had MUCH more space than I do now in my apartment, and a big closet that my mom always made me go through every now and then...I had an attachment to clothes and even things I didn't wear I kept 'just in case' but my mom always wanted me to donate it to a charity or the salvation army if I didn't wear it for a while!

brownie...um any?!! i kid...I LOVE fudgy, doughy, somewhat raw brownies...where as my BF loves crispy edges! (to each his own!!)

I try to clean out my closet like every season, but I usually only end up giving away like one article of clothing, so I'm not sure it even counts as cleaning out! I am pretty careful with what I buy, so I generally only buy things I really like, which doesn't leave a lot of stuff to clean out!

Your lunch looks so good! Sometimes I'm seriously craving something sweet at lunch, but I always end up eating something I deem to be a more "lunch appropriate" food. Screw my food rules though. :P

The peaches and apricots in this post look so good! I can't wait until peaches are at the farmer's market!!!!

Both of your brownies sound excellent. I love TJ's pb pretzels but can't keep them in the house or I'll eat them all at once, lol. I like homemade triple chocolate brownies with pb swirled into the batter! Or m & ms. with a treat like brownies, I figure I might as well go all out.

I was actually just at Plato's Closet today! For high-end clothes, I try to sell those on ebay, anything else gets pawned off to Plato's, and whatever they reject goes off to Goodwill.

Pretzel brownies (well, blondies, but still)? Those should be named PMS silencer.So very amazing!

I've never heard of brownies made with peanut butter pretzels. My favorite types are brownies made with chocolate chips, and blondies. And they're always better with a scoop of ice cream.

Fudgy and moist is most def where it's at. Nothing makes me more mad when a brownie tastes like chocolate cake. If I wanted chocolate cake, I wouldn't have asked for a brownie!

I purge at least twice per year. I normally just take things to the goodwill because I wear my clothes out to the point where I don't think a consignment shop would take them!
