Look what I got today!
I went to Border’s today to pick up a copy of Caitlin’s Operation Beautiful book. I’ve already read about half of it, and I love it- I wish I could buy a copy for every girl and woman I know. Caitlin really did a great job- it’s impossible to read it and not feel good about yourself J

Because our family friends were staying in my room, I spent the night on the couch and woke up at 6 am when my dad started moving around in the kitchen. I enjoyed my daddy’s company while eating my usual cereal bowl of Fiber One, fresh blueberries and almond milk:
My dad is just as obsessed with cereal as I am. I’m convinced it’s in my genes to love the stuff.
The weather today was perfect for running- low eighties with no humidity and plenty of sunshine. I covered four miles in a little less than 40 minutes, and followed it up with Level 1 of Jillian Michaels’ 30-Day Shred. The 20-minute strength workouts are the perfect complement to cardio.
By 11, I was ready for lunch! I had two Nature’s Promise whole-wheat tortillas slathered with a thick layer of Maranatha creamy PB. I definitely didn’t skimp, and enjoyed every last bite sticking to the roof of my mouth! On the side I enjoyed a Pink Lady with cinnamon.
I spent a few hours going to Border’s to pick up the book, and Whole Foods to stock up on produce. I bought several new-to-me veggies, including beet greens and parsnip! Afternoon snacks were an unpictured handful of almonds and a salad with heirloom tomatoes, cucumbers, carrots, hummus and nutritional yeast.
For dinner, I made my family a vegan version of an all-American meal: barbeque tempeh, kale chips and parsnip fries.
Kale chips tossed in EVOO, salt and garlic powder, then baked for 15 minutes at 350
Tempeh marinated in a mixture of barbecue sauce and agave, then baked for half an hour at 400
Sliced parsnip tossed with EVOO, salt and pepper then baked for 45 minutes at 400
Everything was delicious! I’ve never had parsnips before, and I loved their mild cinnamon taste. I’ll bet they would be delicious baked with cinnamon and brown sugar!
For dessert, I had a nectarine and half a bar of Salazon sea salt and sugar dark chocolate. This bar was absolutely phenomenal, and the pretty molding makes it feel so special.
With my brother’s wedding on Saturday, this week is going to be absolutely crazy for my family! It’s so bizarre to think that my brother will be married in six days…I feel like he was just yesterday that he was feeding me crayons and locking me in the basement. It’s such a cliché, but time really does fly! Hope you have a great night J
What’s your favorite feel-good quote? I love Jack’s “To making it count” speech from Titanic, and Saint Augustine also has some really beautiful ones.
Do you have any sibings? Older or younger? Have any of them gotten married?

I have two older sibs--a sister (27) and a brother (23). I'm the baby! None of them have gotten married, but they both are in serious relationships, so the clock's a-tickin'! :-D

I cant wait to get the book, I know its going to be a best seller!!! Yay for Caitlin!!!!!!
Love you girl and hope you have a great night!!!!
Oooo it's wedding week everywhere! My older sister got married 2 summers ago, and I am getting married on FRIDAY!!! Yay for weddings!
Is there anything better than a book + iced coffee?! (I'm assuming that's iced coffee you have.) I'm definitely going to try to find the Operation Beautiful book!
I have a brother and a sister and they are both younger.. but the way my sister is about boys she will probably be married off before all of us and she's the youngest! Also, I am so glad I'm not the only one who likes having lunch at 11 :)
I love any type of roasted veggie.. and I've been meaning to try parsnips! They look delicious :)
I have one older sister, and she's actually getting married this september! I'm really excited for it... we aren't extremely close, but it will still be weird to think of her as a wife!
<3 Tat
I've always kind of wanted an older brother... I'm an only child, so I've never gotten to experience older sibling wedding craziness, but some of my older cousins have gotten married, and it was a fun but strange experience at the same time... You're right and it really does feel like yesterday that we were kids playing outside in the dirt... I hope this week isn't TOO crazy for you :)
And one of my favorite feel good things to read is actually the poem Footprints in the Sand... love that one.
I have a younger brother by 4 years. He's not married, but has a super sweet girlfriend. :)
I totally need to run out and get this book! How cool is it to see it on the shelves! ;)
Hope you had a great day girl!
I have 3 siblings (2 sisters, 1 brother) who are older than me. No one is married yet. Hopefully we spread ourselves out though, otherwise things could get hectic! :)
I have a younger sibling and she's single. I can't wait till she gets married, though. Of course, that's what everyone tells her, which I'm sure gets annoying!
O.o you just said "low eighties" and "perfect for running" I guess I really am a winter bug. haha.
I still need to make kale chips! Everyone's been blogging about it--I need to hop on this train!
And I have an older sister, 23, a younger brother 16 and a younger sister, 9 :)
yay you got the book! i can't wait to get into town and buy it myself!! did you see my entries?!?!?! :D
Your lunch tortilla/quesadilla thing looks perfect; I totally believe in never skimping on the PB! :)
I know people (older friends) who are getting married now and it seems so crazy. My sister is 25 and not married, and she only just started dating really. I can't imagine going to her wedding at all!
Awesome you have the book. Reminds me I need to get it ASAP!
i have 3 younger brothers and thankfully none of them have gotten married yet! that freaks me out!
oh i have such a crazy sibling story, it's not worth mentioning. but i love the whole crazy bunch!
i love the concept behind operation beautiful. we need to continue the revolution!
Omgosh I'm so jealous you bought the book! I saw on Cailtin's blog yesterday that a reader had seen it and sent her a picture but I thought for sure, it must be a fluke and not actually *out there* yet! I must buy one tomorrow--actually, contemplating going out right now and looking for it hahah :P
I know what you mean about time flying, it's crazy that your bro is getting married, I remember on your blog when they had just announced their engagement, crazy!! My older sister just moved to Philly at the beginning of the summer, to start grad school, that's tripping my out! And crazy that I'm half-way through college, that my little sister is about to start, that there are no "babies" left in my household...
Congrats on your brother getting married! I have an older brother but if he got married now...well I think my parents would have a heart attack! He's 25 but totally not mature enough for marriage.
I eat Fiber One pretty much every evening for snack:P haha
my sister is 4 yrs younger and she got married 3 yrs ago and now just had her 1st baby 2 weeks ago..and the thought of her being married and having a baby...it was just yesterday I was teasing her and locking her out of my room and calling her nicknames she hated. time does fly!
parsnips...so good! also with turnips and rutebages, they are all the same tuber family. Roasting in either evoo or coocnut oil, some ginger powder, S & P, til they carmelize...so good. I have a recipe for roasted fennel on my site, same concept. That's another good one to pair w/ those.
Living in CA, and having a CSA box and farmers mkt, I need to be creative with all these tuber family veggies i get in the fall
beet greens...so good for you!! powerful detoxifier and diuretic and all around powerhouse of plant based protein and iron!
Neither my older sister (24) nor brother (22) are in relationships, and probably won't be. For some reason my family doesn't do well in the whole relationship business. My sister lives in Japan, where she doesn't have very many English-speaking guys there. I'm secretly hoping she ends up with an Australian or British guy who frequent Japan. My brother dates 5 girls at once, then they all find out, get mad, then he dates 5 more. He's never going to learn.
I went to B&N to get my copy of Operation Beautiful today and it wasn't in. :( I reserved a copy though and CAN'T WAIT!!
Ooh, that all American dinner sounds fabulous. I had kale chips for dinner, too. But when do I not, really. Love them!
I'm an only child, but my cousin's are getting married and it's crazy!! Weren't we playing with Barbies, like, yesterday?! Congrats to your brother!
Parsnips are delicious. My mom first had parsnips, creamed, in England, and they were her favorite vegetable to include in a soup or roast growing up. Every time we ate them she reminisced about her study abroad days in England. They're a special root vegetable for me!
So exciting for Caitlin! Congrats on getting the book!
There are 4 girls in our family. Our two older sisters are married.
Have a great time at your brothers wedding! Congrats to him and his bride to be.
I can't wait the buy Caitlin's book. I'm going to the store to look for it today!
I have a younger sister (17) and she's in a serious relationship, but I don't think marriage is on the agenda quite yet. ;)
That bar reminds me of the old school Crunch bars that used to have scenes of Disney movies or characters etched into them. LOL
I badly want to find Caitlin's book! Maybe today.
oh gosh I am just dying to get my hands on that book!! I keep hearing great things about it :)
ahh love your peanut butter wraps, because lets be honest, everything taste so much better with some nut butters! haha and i personally love your all american meal. kale chips rock my socks.
Hi beautiful,
I totally agree that the 30 day shred is a perfect compliment to a cardio workout. I love going for a run and then shredding afterwards. I really want to try the no more trouble zones dvd, too. I think I was reading that you like that workout. Now that I'm done the shred (I do it from time to time) I'm ready to move on with another Jillian workout.
I am SO jealous of that book!! I want to buy a copy for myself, and my mom, and my best friend, and my godmom, etcetcetc.
My sister is 3 years older than me and got married exactly a year ago! The time went by so fast. I love that you eat fruit and chocolate every night after dinner because that is exactly what I crave every single night. Nice healthy dessert :)
my dad is SO obsessed with cereal too! he has the biggest bowl in the world every morning haha. i think he picked up his obsession back when i had a big old obsesh for it too :) i love that you have daddy & daughter time over cereal! it's so cute :)
oh gosh, I'm semi-obsessed with quotes :/ One of my favorite is "Fall seven times, get up eight." The rest of my favorites are all about lovey dovey crap, haha.
I can't wait to get my Operation Beautiful copy!! I pre-ordered it, and it's at my house, but I'm at the shore. grrr. Speaking of which, can't wait for Thursday. Yay! :D
I've been a vegetarian for almost 4 years now and I'm still afraid of tempeh! Yours looks delicious!
I just love sitting at book stores and reading a feel-good book. Makes me so happy.
I have 2 older brothers, and one of them got married when I was in high school. The other one is not married. I've known my brother's wife since I was 12, so that it wasn't weird for me at all. Good luck with the crazy pre-wedding week!
Thanks for the book rec! My favorite feel-good quote is probably 'this too shall pass' - yes, it's kind of depressing, but it comforts me! I have a sister who is 3.5 years older and married!! She got married in May 2005 (me in Feb 2008!)
Ooh, I'm jealous you have Caitlin's book!
I have a younger brother (3 yrs.) and he just married for the second time 2 weeks ago. I think the first time it was more weird for me.
Your dinner looks delicious!
congrats to your brother!! so exciting! I have a brother 2 years older who has been dating his GF for 6 years! the engagement should be soon (i think!) haha
those kale chips just made me CRAVE them!
Ahh - your kale, tempeh, parsnip plate looks scrumptious!
