Overnight oats! Nutella raspberry oats, to be exact.
Growing up, Nutella was a pantry staple. I’m wise enough not to eat half a jar in one sitting anymore, but mix a heaping spoonful with coconut milk kefir, oats, raspberries and cocoa powder, and you’ve got one heck of a breakfast.
After breakfast, I got my sweat on with Jillian Michaels’ No More Trouble Zones DVD. I increased the weights from 3lb to 4lb, and definitely felt it. My triceps are already killing me. I kind of love being sore, though…
Lunch was a yogurt mess with So Delicious vanilla coconut milk yogurt. I added regular Puffins, a pound of strawberries and a whopping spoonful of Naturally Nutty cinnamon vanilla sunflower seed butter.

When I got hungry mid-afternoon, I dipped some cucumber rounds and a whole-wheat tortilla into a bowl of hot salsa.
I also whipped up a batch of espresso bark for a birthday party I’m going to tomorrow. The birthday boy is a coffee lover, so this was a no-brainer! To make it, simply melt 2 cups of good-quality dark chocolate chips, stir in a cup of whole coffee beans, and spread the mixture into a pan lined with wax paper. Harden in the refrigerator before breaking into bite-sized pieces.
Of course, I had to sample a piece!
I wanted something simple but different for dinner. After quickly browsing a few blogs, I came across Mama Pea’s crack wrap and knew I had to try it. I slathered a whole-wheat wrap with garlic hummus and a slice of Tofutti mozzarella-style cheese, and then browned it in a pan with a little Earth Balance. The result? Ooey-gooey goodness.
When it was done, I wanted another. So I went for it. Crack wrap #2, this time with spinach-artichoke hummus. Yes, we have multiple tubs open at once. We’re a family of hummus addicts.
It was just as good the second time. Check out the melty innards!
On the side, I had some steamed broccoli, carrots and tomato with olive oil, salt and nutritional yeast.
Dessert was yet another pear with four squares of Hershey’s dark chocolate. My mom bought a dozen pears last time she went grocery shopping, and apparently she and I are the only family members who like them.
One thing I’ve been meaning to mention is that I always have several nighttime snacks! I eat dinner early, so it’s necessary. Peanut butter sandwiches, bowls of cereal, mixed nuts…I generally don’t photograph these foods, but I may start in order to help me overcome my picking problem. I still find myself picking occasionally, so maybe taking pictures will encourage me to have a real snack instead. I’ll give it a go for a while and see how I like it!

I don't know what this means. You mean...people DON'T eat half a jar of nut butter in one sitting? My entire sense of right and wrong is confused right now. ;)

I eat bananas every single day. I just realized I go through a whole bunch every two days. It's getting ridiculous. I also eat broccoli and spinach or kale every single day. And, of course, chocolate in more than one form!!
You know I don't photog everything I eat,... I have too much ADD and I'm usually too hungry to remember. The other day I actually woke up in the morning and decided I would photograph everythign I eat but by lunch time I'd already forgotten. Story of my life!

and everyday i always have carrots and coffee, apples is a close one as well but has some other big fruit competitors. i go through phases with my food!i've had a hummus hiatus, as well as a bar hiatus for a long time, i kind of like it cause it's so fun when you bring a food back from vacation..

Your crack wrap(s) look delish! Love those! I definitely have oatmeal every day, whether it be in the form of overnight oats, hot oatmeal, or oatmeal pancakes. My day just isn't complete without it; sometimes I'll have it for a nighttime snack! My family is all about some hummus too. Right now I think we have classic, olive (my fave), and roasted red pepper!

I dont photograph all my meals or snacks, just highlights! Like for instance I had a salad for dinner with veggie sand a bocaburger, but didnt post it, so I def do not post all my eats!!

Man it would take me a while to get used to photographing everything! During school I had a salad for lunch pretty much every day, but other than that it varies, depending on what I bought that week!
nutella oats sounds delicious!!!! i can't believe i've never tried that combo. i usually have nearly every morning peanut or almond butter-banana-flax oats. delish!
i like to have an after-dinner snack too as i eat dinner with parents usually, and they eat at 5-6pm which is too early to go to bed without having anything else in my belly. the crack wrap looks fabulous! i tried vegan cheese once and hated it...maybe i should give it another go.
staples in my house are apples, cherries (in the summer), peanut butter (skippy for my parents lol), cheerios, salsa and hummus
"coffee and crack" is this a healthy living blog? i eat greek yogurt and vita tops every.single.day. and some form of chocolate! (soymilk, granola bar, fro yo, etc...) its my drug of choice:-) luv u!!!!!!!!
When I didn't see your regular bowl of cereal, I thought I stumbled onto the wrong blog! That would be like me switching out my morning oats for a bowl of cereal ;) I eat oats, almond butter, Greek yogurt, bananas, chocolate, cereal, and salad beasts on a daily basis... Just can't say no to the things I love :)
As for how much I photograph... very rarely do I show everything; I only show the interesting meals, or the ones that pertain to the topic I'm blogging about. I know that a lot of people have a problem with comparing what they eat to what other bloggers eat, and I don't want them to do that with me. Plus, it's just kind of a pain to always be whipping out the camera, or trying to make things look pretty.

Ok your daily eats/photos...I have always been impressed how much you DO photograph but for me personally, i could never do what you do b/c I dont want to 1. do it and 2. what i eat is redundant and 3. nothing i eat seems that special and 4. it would take too much time and who knows if ppl really want to see me eating more plain, raw veggies. I just feel like i would be wasting everyone's time! Your eats always look awesome and if you can/desire to keep photographing them, then hey, cool..but if not, skip it babe.

I eat oatmeal and peanut butter almost every day - raisins and almonds are another staple for me. And, an apple a day keeps the doctor away! :)
I don't really document too much after dinner. I maybe take one picture of a snack when I usually have about 3 :)

That crack wrap looks like...crack. I never thought to brown my wraps in a pan. Mama Pea knows her stuff.
I eat bananas and raw cacao everyday. My life is just not okay without them. I also eat some sort of green everyday, often multiple times. I seriously can't stop kale chipping.

I stop taking pictures after dinner, too. I don't even bother to photograph dessert unless I think it's particularly yummy, my camera is right there and I haven't uploaded pics yet. But I always have a bowl of cereal before bed, and almost always a little something in between dessert and the bedtime snack, too.
I don't bother with photos because I kind of see it as my "time off" from blogging, and I like to get a post up after my (also early) dinner. That and...well, photography is also a large part of me, and I don't like night-time lighting :P
i eat cottage cheese and yogurt almost daily. and various fruits and veggies, of course!
as for my whole family...we all love peanut butter i guess. i'm not sure! the only really unilaterally shared taste we seem to have is for diet coke haha
i take a lot of breakfast pictures and sometimes snacks or dinners if they're interesting. really i just take photos if its something worth photographing, if it's something that's on there every day it would get boring

My family has such different tastes in foods that I don't even think there is something that we all love! Making family dinners is such a hassle in our house.
I usually photograph my breakfast and lunch, and sometimes my dinner if I'm making it for myself. I rarely take pictures of my snacks though. It's to much work to photograph all my little nibbles!
I think I eat some type of nut butter everyday to get some healthy fats and proteins in amidst all the fruits and veggies. Sometimes I crave it too, not that that's a bad thing ;)
I don't document food too much anymore unless it's something pretty spectacular or a new recipe or something like that.

Hi! Just wondering what kind of ww wraps do you use?
I don't think a day has gone by in a LONG time where I haven't eaten an apple, or tahini. Those are probably the two most-consumed foods in my life ;)
I used to LOVE nutella as a kid... but now I am kind of allergic to hazelnuts so I have to steer clear!
