This afternoon, I got the baking itch. While I perused cookbooks, my mom pointed out our massive supply of zucchini.
Zucchini bread? Sold. I added chocolate chips, just because they make everything better.
Zucchini-Chocolate Chip Bread (adapted from Sweet and Natural)
Makes two loaves
3 c whole wheat or spelt flour (I used half of each)
4 t baking powder
½ t baking soda
1 t ginger
1 ½ t cinnamon
2/3 c canola oil
2/3 c honey
1 c almond milk
1 T vanilla
2 large zucchini, grated (about 3 c)
1 c chocolate chips
Preheat the oven to 350*F. Line the bottom of two 9x3 loaf pans with parchment paper and coat the sides with nonstick spray. In a large bowl, mix flour, baking powder, baking soda, ginger and cinnamon. Whisk oil, honey, milk and vanilla together in a separate bowl, then add to the dry mixture and stir well to combine. Fold in chocolate chips and zucchini. Pour into prepared pans and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
My substitutions and dares came out perfectly! The loaf itself isn’t super sweet, which makes the perfect foil for the dark chocolate chips. I tried a slice fresh from the oven.
I also snacked on a big bowl of strawberries. Not quite as juicy as they were in mid-July, but still delicious!
For dinner, I tried my hand at something new: stuffed eggplant.
I scooped out the insides of an eggplant then diced them and sautéed them in olive oil with artichoke hearts, tofu, tomato and garlic. I put the mixture back in the eggplant, baked it for 15 minutes at 350, then topped it with roasted red pepper hummus.
On the side, I had a roasted zucchini and some leftover spaghetti with pesto sauce that my mom made.
It was good, but I must admit that I’m not an eggplant lover. I keep hoping that if I eat it enough, I’ll be converted!
To satisfy my sweet tooth, I had an overripe pear and three squares of Lindt 85% dark chocolate.
I’m going to see The Social Network with my parents tonight. One of the best parts of growing up is not feeling like a loser when you hang out with mom and dad on a Saturday night J

I really don't love eggplant either unless it is in indian food or ratatouille...I can't get over the texture!

I taught myself to like salad. I guess that's not a singular food but it's a dish, right? I HATED salad up until about seven months ago. Now I want to know what the hell I was missing!! But I've kind of trained myself away from nightshade fruits like tomatoes and eggplant - I always love them (esp together) but I have reactions to them so I try not to eat them.
Boyf and I went to see The Social Network earlier this week - I LOVED it. I thought it was a really well-written and well-conceived movie. Justin Timberlake eye candy only sweetened the deal!!

My parents are geeks and used to be embarrass me so much, but I'm over it. I'm kind of a geek myself. :)
I've trained myself to like a bunch of foods, particularly nuts and beans, which I hated so much as a kid I would cry if someone tried to make me eat them.
Have you eaten eggplant at a Chinese restaurant? Eating eggplant (qie zi) in China is what converted me.
The last movie I saw in the theater was Iron Man 2. I can't believe I didn't see Inception, I need to look for it at the $2 movie theater.
I trained myself to like olives. There are still some instances where I'm not fond of them, but for the most part I enjoy them now.

as for food, i kinda trained myself to like cottage cheese. I used to never really like it, and now I do! Only certain types tho- Im still picky :)

I took your recipe and made some changes! I took out the chocolate, swapped pumpkin for oil, halved it and made mini muffins, and swapped carrot for zuchini, and since I halved the recipe and i didnt have a 1/6 cup for the honey i did one tablespoon. Turned out delicious! Thanks!
the last movie i saw in theaters was nearly 5 yrs ago. i was pregnant w/ skylar and went to a movie so i could get in some a/c as it was 100F and i had none. and i was puking. And puked thru the movie. But at least i was in the a/c . I dont remember the movie....that was the last one, i kid you not.

I'm not a huuuuge lover of eggplant either.. and now I can admit it! It's not so bad in eggplant parm with it's covered in cheese and sauce.. haha!

I find if I eat something enough, I just automatically like it! But surprisingly enough, I trained myself to like oatmeal about 4 years ago. What in the world was I thinking when I thought I didn't like it?

I trained myself to like red wine a few years ago. At first I had to choke it down, but now I love it!
Eggplant can definitely be really hit or miss. I like it best when it's grilled with EVOO and salt until it's nice and mushy. It tastes really good on sandwiches or pizzas that way.

I had to sort of convince myself that I liked plain yogurt. It took a while but once I was there, plain yogurt (especially fullfat!) is one of the most wonderful things ever ever of all time. :)

I love eggplant when it is slathered in sauce, cheese or fried...does that make me a terrible person? haha Nah...I love other veggies...prepared healthfully...that's my exception! haha That zucchini bread looks stellar though!

Any eggplant you don't want, you can send my way. I am on a real kick with it right now. I LOVE them cut into wedges and broiled with olive oil and lots of garlic salt. Tastes very similar to actual potato fries. Take that mcdonalds!

Yes I have trained myself to like foods ;) Some foods I still eat from time to time but I an not a huge fan of them, but over the years I have come to really like many things, but it did take some time to train my taste buds to like new things :) But taste buds are always changing making what I eat change from time to time! xoxo

Anyways, this choc zucc bread looks AMAZING. I definitely want to make it asap ... if I only want to make 1 loaf though, can I just divide all your ingredients in half? Would that work do you think?
