Vegan Breakfast Rice Pudding


When I was a kid, I loved rice pudding. Sadly, it wasn’t considered a “cool food” in the elementary school lunch line, so I’d usually pass it up for a cup of lime or cherry Jell-O.

My breakfast this morning made up for all those lost rice puddings.


 Last night, I added ½ c vanilla almond milk and a medium mashed banana to a prepared cup of Minute ready-to-serve brown rice. This morning I stirred in some cinnamon, topped it with some cashews and raisins, and vegan breakfast rice pudding was born!


Creamy, sweet and filling with that rice pudding texture I love. Win.

This morning’s workout consisted of speed training on the treadmill. I did a three-mile tempo run in about 24 minutes, maxing out from miles 2.00-2.25 at 8.5 mph.

Post-breakfast, I dressed for the day in my favorite sweater from Rugby- it’s super warm and cozy, so I wait for truly chilly temps to break it out!


I paired it with a long-sleeved white tee, my favorite jeans (which keep shrinking at the Laundromat, despite using the lowest dryer setting L) and J.Crew loafers.


After a morning of classes, I came home and dug into a simple salad beast for lunch.


Lettuce, tomato, cucumber, carrots, ½ block of plain tempeh and a big dollop of plain Sabra.


Hit the spot- I missed my greens this weekend!

I also had a gala apple and a slice of sprouted sourdough with pumpkin butter, on my finest china.


It’s an easy week for me schoolwork-wise, so I’m debating whether to bake or go to the farmer’s market this afternoon…

What were considered the “cool foods” when you were a kid? Gushers, Tastycakes and Doritos definitely topped the must-have list in my elementary school. Which explains why I never fit in with my turkey, lettuce and Dijon sandwiches and pots of yogurt.

i've never even had rice pudding! I loved Gushers and Fruit Roll Ups. Also - Handi-Snacks and Dunkaroos!

And I totally want your sweater. Grey, cozy, and really cute - those are basically my wardrobe criteria at the moment.

Gushers were worth their weight in gold in the trading scene. Sadly, my mother did not seem to understand why it was important I have "trendy" snacks :-(

It's so funny how food was considered "cool" or "uncool" when we were kids! I remember loving tuna (blech) but would neeeever, ever admit that because everyone would always say stuff like "ew, i hate tuna!" haha. that and mustard...everyone banged on mustard and I was too shy to admit I liked it. Hmmm...
your sweater is SO cute - I love cozy, warm sweaters and I just love the leather buckle that one has.

I went to a really small elementary school as a kid and I packed my lunch every day. I recall my friends eating those lunchables sometimes, but for me it was usually a pb sandwich and an apple (not much has changed!) Sometimes my mom would mix it up and pack chips and salsa!

Hohos, definitely. I used to eat a PB&J, goldfish crackers, and a cookie all the time for elementary school lunch.

I hate when a trip to the laundromat results in altered clothing sizes! I've shrunk countless pairs of jeans. Sigh.

Do you remember Dunkaroooos!? Those were a BIG treat for me when I was younger...I liked the ones with vanilla frosting and sprinkles :) Now a days Im not too sure how much of a treat they would be though haha

Yes - gushers! And dunk-a-roos, Fruit by the Foot and sour skittles. I'm sure I could think of a million more. Haha.

Awesome breakfast, I need to try rice pudding again. When I was a kid, SmartFood popcorn, Cheetos, Squeeze-It's and Oreos were huge.

LOVE rice pudding!! I always thought it was gross as a kid - what was I thinking?! I guess I equated it with old people since my grandparents always ate it when we had brunch at the Jewish deli. LOL.

and just yesterday, i cooked up rice with coconut milk. Had i stopped there, i could have easily had rice pudding..next time, next time.

Jeans and the dryer do not mix. Girl, never put anything you care about in the dryer. I know you think you dont have room and it's a bit of a PITA, but you need to take them home wet, hang them over a hanger and hang it up and just wait for 24 hrs for them to dry. No dryer!

And cool foods...god I sure hope skylar and the next generation thinks it's cool to eat high raw vegan food and handisnacks and fruit rollups are a thing of the past :)

I have a sweater just like that! I loove your outfit :) Don't you hate having to wash jeans because they ALWAYS shrink, no matter what you do!
Oh yes, Doritos definitely topped the list. But what I remember most are Warheads!

Dunkaroos, Lunchables, and Fruit roll ups were all pretty popular. My lunches never fit in with those either. ;)

dunkaroos & kaola bears were all the rage! :) Although I loved gushers too.

That breakfast rice pudding looks really good - I think I just may have to make that... except I'd have to make rice right now & don't want to. The next time I have leftover rice, I totally will!

Eugh, dryers at the laundromat...I know exactly what you're talking about.

My lunches were never considered cool either, but I remember Dunkaroos and Lunchables as always being "hit" items...

I'm from Argentina so rice pudding WAS one of the cool foods! It's pretty big there. Usually anything with DULCE DE LECHE was and will always be cool! <3
