Vegan Quiche and Squash Soup

Last night before heading out, I put together an easy vegan kale tofu quiche:


I actually got this idea from the lovely Lizzy last spring, but haven't made one for awhile. It takes awhile to cook, but is really simple and delicious!


For two servings (I halved this to make a single serving):
 - 1 block firm tofu (pressing isn't necessary, just drain and blot with a paper towel)
 - large tomato
 - several large stalks of kale
 - 1/4 c nutritional yeast
 - salt, pepper and any other desired spices to taste

Preheat oven to 400*F. Remove stems from kale and microwave leaves for about one minute, or until they are softer and less bulky. Chop tomato. In a small casserole dish, mash all ingredients with a fork until well combined. Bake for 45 minutes to 1 hour, or until top begins to turn golden.


I topped mine with lots of salsa, then stirred it all up- delicious!

Today has been rather low-key over here! I got a great elliptical workout in this morning and ate some lunch before taking a nearly two-hour nap. Four and a half hours of sleep will do that to you!

Later in the afternoon, I ate an almond butter sandwich on Alvarado Street bread before heading out for a walk around the neighborhood with my dad.


The foodie highlight of the day, however, was definitely dinner. I put the immersion blender Mike's mom gave me to good use and made Emily's squash soup, which was chock full of butternut squash, apple, carrots and spices. So warm, comforting, filling and healthy- by far one of the best soups I've ever made!


I enjoyed a big bowl alongside a heap of green beans roasted in canola oil and garlic salt, as well as a sandwich thin.

Some pistachios have made their way into my hands as well...TV snack food!

I don't think I have made a soup from scratch. I think it's because all the recipes I bookmark make 8 servings, and I don't really want that much leftover. I've made tons of chili though!

I've wanted to try that soup ever since I first saw in on Emily's blog! I want an immersion blender!!!
I made a nice chunky harissa spiced soup with chickpeas and veggies. 'twas good! :)

Hoesntly is nutritional yeast anything like cheese? I just can't imagine a world w/o cheese.

Looks delicious! I don't eat a lot of tofu (I eat a lot of beans, though!), but this looks like something I'd really like. I love making soup - usually something chunky. One of my favorites is lentil soup with veggies and wild rice.

i make soup from scratch all the time..now. as in just the past 6 mos. i JUST posted on this 2 days ago b/c i posted a new soup recipe..that i used to be scared but now i love it!

and i LOVE the baked tofu w/ tomatoes and kale and nooch. omg i am totally going to do that! lasagna without the noodles,garlic or onions..perfect for me!

I've made a few soups from scratch just within the last couple of months. It's great for using up veggies in the fridge that are going bad. Chili is my favorite to make, I think.

I love making soup from scratch! I love using the leftovers for lunches and dinners later in the week. I really want to get an immersion blender later to make my own soups like that though. I've only done the stews or vegetable-type soups before.

YOU READ MY MIND! I have a post planned for tomorrow BEGGING for ways to use tofu. This quiche is so perfect!

I've never made soup from scratch (canned is just so much easier. Ha!) but I really want to try making my own chili.

I make homeamde soup at least once per week. I just made veggie chili today and honestly one would think I have 20 people living in my house. We are eating chili ALLLL week! :)

my favorite soup to make is definitely my thai-inspired coconut soup! it's roasted sweet potatoes, butternut squash, peanuts, and coconut milk. it is sooooo good!! :D

Sometimes you have so many delicious recipes/food on your blog I don't know which to comment on first, haha! I'll go with your quiche, though - it sounds amazing! I remember eating and LOVING mini-quiches as a child - and this looks even more appealing. Making soup from scratch is fun and it makes your kitchen smell divine - I hope you enjoying your evening and your goodies :)

I just recently made a yummy autumn vegetable soup from Fine Cooking magazine! I've never tried making butternut squash soup, but it's something I really want to try. The recipe you used looks awesome!

I have a leftover turkey & veggie soup that is really tasty! If I don't have turkey leftovers I just substitute chicken. It's delish. :)

Yum city - I need to make that tofu quiche this week, it looks delicious.

And i LOVE making soup...it's a weekly affair at my house, I like to have tons of leftovers because it's such an easy lunch to pack. My favorite kinds usually involve cooking a bunch of veggies in a pot,then adding broth, simmering for a while, and then whipping out my immersion blender to get some of those veg chunks to thicken the soup up. Deeelish.

@ sana: It's nothing like actual cheese, but it has a parmesan-like taste and adds a lot of protein, vitamins and taste to a lot of things!

@ julie: Substitutions...maybe egg whites? Haha that's more of a regular quiche then though :)

I have made a lot of different kinds of soup from scratch. One of my favorites is red lintel soup. Just today I made a Vermicelli Noodle soup. YUM!

Your quiche looks really tasty. I would attempt to make it, if I only had an oven!
