This morning, I went for a hike with my dad in Ridley Creek State Park.
The weather today is spectacular and my dad loves long walks, so it was the perfect way to spend some QT with my daddy before heading back to New York tomorrow.
Isn’t the park visitor’s center gorgeous? It’s an old mansion that can still be rented out for special events. They were setting up for a wedding today!
We started off on the 4.3-mile road that loops around the park…
Until we got adventurous and decided to hike through the woods.
We followed the “white” trail. This tree cracked me up- confusing much?
Don’t close your eyes, Dr. Dad!
Dr. Dad actually climbed Mount Kilimanjaro a few years ago. During our hike, we talked about climbing to the base camp of Mount Everest someday. It’s a three-week hike, so it would be challenging, but I feel like it would be an incredible experience.
The trail got steep towards the end, which made for a good workout!
Our walk lasted two hours on the nose. I loved catching up with my dad- I’m a total daddy’s girl J

Breakfast before our hike was a bowl of TJ’s High Fiber cereal, Cascadian Farms multigrain squares, raspberries and almond milk.
Hits the spot every time!
When we returned, I made a guacamole salad for lunch.
- Large avocado mashed with lime juice, salsa and S&P
- Large tomato
- ½ cucumber
- handful of baby carrots
- romaine
- more salsa!
“All shook up” (my hands are shaky and my knees are weak):
I also had two Cedar’s whole wheat tortillas with more salsa for dipping.
And a big bowl of strawberries!
I’m off to pack, pack, pack. My parents are driving me back up to NYC tomorrow and all that’s packed is my food. Typical, right? Enjoy your Saturday!
If you could climb any of the seven peaks, which would you choose? I’d do Everest or Mount Kilimanjaro- probably Kilimanjaro, since the odds of survival are way higher!

ridley creek state park looks gorgeous! i love going on hikes where there's just miles and miles, and many different options. i just don't do it enough! sounds like you and your dad had a fun time, glad you were able to enjoy it before going off to NYC again :)
That sounds so much fun! The pictures in the park are beautiful!! And I'm a total Daddy's girl too. My family and I always love going out to eat to catch up. We usually try something new and then we'll come back home and watch a movie. That's a pretty typical family night for us. Have fun in New York!!!

The hike looks beautiful! Strangely, I love going grocery shopping with my mama...we always talk and have a great time. And the best times with my dad are just sitting around the kitchen table talking after we've finished eating, I love quality time.

I've never climbed Everest but I did live in China and I've been very close. It's a really interesting, beautiful, fascinating part of the world and if you ever get the chance to go, I'd definitely recommend focusing on the culture there and not just on the nature. There are many ethnic minorities in China who live very similarly to their ancestors and it'll even remind you of traditional Native American cultures.
I don't have a lot of desire to actually climb a mountain, but I'd love to see Kilimanjaro and visit Tanzania. I studied Swahili in college and I'd love to get to use it!
I don't live near my parents but I Skype with my mom and we drink coffee and chop vegetables :)
I love to walk my dog with my mom. We always have such good chats while we walk.

I don't live near my parents, but when I go to MN to visit them, I love going boating and drinking a glass of wine on the deck with them.
Ha! I eat with my parents. We really don't get out much to do things, which is a little strange but it works for us. It seems like we all get out and do things seperately, but when we get together all we want to do is prepare and share a meal, and just enjoy each other's company. Like I said, it's what works for us.

I LOVE hiking, and definitely have not done enough of it in my lifetime! And you & Dr. Dad are adorable =)

My mom and I like to workout together and my dad and I do things like canoe trips and winery tours together. It's funny how you enjoy spending time with your parents as you get older!

I love that you went hiking with your dad! I love to ride horses with my mom--outdoor things are fun to do together sometimes! We've also gone kayaking...
as for the mountains, I would love to *try* to hike kilimanjaro too!

I'd hike Kilimanjaro too! Hiking is also something I love to do with my dad - he's very outdoorsy and growing up we'd take off on weekend hikes all the time. It's something we always try to fit in when I visit my parents now. So dear to my heart! :)
