Beta Makes it Betta


Is it just me, or are rainy days the best for baking?

I’ve spent the last two hours in the kitchen making Mama Pea’s tofu gnocchi (pics to come later!), vegan chocolate-chip pumpkin-walnut cookies, and puppy chow. Whew!

For the cookies, I knew I wanted to make something pumpkin flavored, but Tina’s banana-oatmeal chocolate chip cookies were also calling to me. What to do?


I subbed out the mashed banana for ½ c pumpkin and added about five minutes to the baking time to compensate for the extra moisture.


Of course, I sampled one fresh out of the oven for “quality control.” Delicious!

Next, I made some puppy chow for my friend Zack. I had an open box of Chex in my pantry from the last time I made this, so I figured I might as well make some more before it went stale!


Somehow, I managed to keep my hands out of this bowl. Miracles do happen.

Rewinding to this morning, my alarm went off at 6 am for a strength workout. A quick glance out the window at the pouring rain was all it took for me to roll over and go back to sleep. My 12 am bedtime last night didn’t help, either! As this lady reminded me, one missed workout definitely doesn’t hurt J

I slept for another hour before waking up and pouring some cereal for breakfast.


Fiber One + banana + almond milk. Standard.


After a full morning of classes, I returned home to a very orange lunch.


Though I usually go the sweet route with my sweet potatoes, Chuck’s “sweet potato mac and cheese” inspired me to try something savory. I microwaved the ‘tater for about three minutes, then topped it with a “cheesy” humnut sauce- 2T each hummus and nutritional yeast.


Carrot sticks provided even more beta carotene!


I also had a honeycrisp with peanut butter…


And a bowl of Angela’s high-protein chocolate pumpkin pudding.


The combination of the meal + baking tastes + cookie has made me stuffed!! Oof.

I'm a big fan of savory sweet potatoes. Plain ole sweet potato fries are my favorite :)

Ohh I love all your baking! I've been on a baking kick recently too :)
I've only ever made 2 things pumpkin-y - muffins from Vegan with a Vengence, and Angela's scuffins - Both were equally incredible :D
I like sweet potatoes...sweet I think :) maple syrup, pear, that kinda thing. Bliss!

Ha! I hit the snooze button twice this week and missed my AM workouts. It was because of some late nights - oh well - sleep always feels great though (sometimes things are just meant to be). Will have to check out that chocolate pumpkin pudding, yum!

Dang girl, you were cooking up a storm! Quite impressive!

Holla to sleeping when it felt right and not forcing yourself to go to the gym! With all the stirring and scooping that baking required, I'm sure your arms got a little workout anyway!

My all-time favorite pumpkin baked good is Veganomicon's Pumpkin Crumb Cake with Pecan Streusel (funny, I had the cookbook right next to me so I could look it up!). There are no words, it is just perfection.

Hmmm, I prefer my sweet potatoes baked in half-moon form and dipped in ketchup. Is that savory? I dunno, I just love it!

I want to bake so badlyyyy. It's so much easier when you're home and your mom has every baking item at your fingertips. I can't really justify buying whole wheat pastry flour when I need you know, produce for the week.

It totally was a great day to just bake and stay inside because of the rain! Your cookies look amazing! Now I am craving some orange food!

Love the sweet potato idea! I'm a fan of anything that can be done in a dorm...I have access to a microwave, nutritional yeast and hummus on the salad bar. Win!

Buttt I can't bake. Win some lose some!

Love the rain shot by the window with your cereal! :) Sometimes rainy days are best to just sleep in and forget about working out. It depends on my mood about sweet potatoes. If I am baking them and eating them like a real potato, I like sweet. If I'm roasting the little guys, I like them savory!

I definitely spent today baking as well! This dang rain! I should've incorporated pumpkin somehow...maybe I will if it's still raining tomorrow, haha!

I defi prefer everything sweet to savory, sweet potatoes are no exception.

I baked this morning, for the first time in MONTHS!!! I turned on my oven.

And guess what, it's the first time in probably 4 months...that it rained here today.

Great minds think alike: rain = baking day!

Glad to see I'm not the only one making use of this rainy day for baking!! The cookies look great, but I really can't wait to see the gnocchi. I'm so glad you posted about the scalloped tomatoes last night. Made that for dinner - SO good!!
I rarely have sweet sweet potatoes! It's one of the things that are so popular in the blog-world but I've just never developed a taste for! Except, I just realized that's a bit hypocritical of me - because I just posted a recipe for sweet potato muffins! baha...not quite what I meant ;)

So seriously.. no joke... I JUST adapted the SAME recipe to make my own pumpkin chocolate chip cookies before I had even seen this post. Just came out of the oven. Girl... smart minds think alike!! :)
And I usually like my sweet potatoes sweet but they are AMAZING savory with barbecue sauce!

On rainy days like these I soo wish I had an oven for baking! I'm so jealous of all this pumpkin deliciousness that is happening. I saved the recipe for those banana cookies too! My favorite pumpkin baked good is good old pumpkin bread, especially with a cup of hot tea :)

I usually prefer my sweet potatoes savory--oxy moron? ;)--but I can go for the occasional almond butter/cinnamon sweet potato, as well! Those cookies totally have my mouth watering!!

I have consumed sooooo much pumpkin, sweet potato, and carrot in the last week. Hopefully I don't turn orange, lol. Fall foods are the best, as we both know.

Mmm puppy chow. Props for restraining yourself, I've never had much success with that! I like pumpkin in any form. Bread, cookies, cake, whatever. It's just so good. And I totally prefer savory sweet potatoes, I actually really dislike it with any added sweetness.

I love honey mustard on my sweet potatoes - it's a little sweet but it's also got some tang. I'll throw some cinnamon or salt on it with the HM depending on what sort of mood I'm in that day as well.

How did you like it? I loved my version, but overall I like the sweet recipes for sweet potatoes...well, is peanut butter sweet or savory?

Favorite baked good in pumpkin bread, but I love pumpkin cream cheese when I can find it!

I'm so impressed with all that baking! Where do you find the time to bake on top of classes and schoolwork?! I can't seen to find the time!

My favourite pumpkin baked good is pumpkin pie. But those cookies look awesome too. I'll eat basically anything with pumpkin in it. ;)

Pumpkin oatmeal and raisins? In a cookie? Yep. Sounds pretty amazing. Although I do think pumpkin pie will always be #1 for a pumpkin baked good.

mmmm your entire day of eats just SCREAMS fall at the top of it's lungs! especially that cheezy sweet potato! mmm i bet that would be superrrrr good with roasted red pepper hummus too!

ugh the rain this morning was even WORSE! i made it to the gym before the downpour started but just as i was leaving the heavens opened up! it took me 2+ hrs to get to work this morning!

Those cookies look SO good. My favorite pumpkin baked good would have to be pumpkin loaf - simple but satisfying! I prefer sweet over savory sweet potatoes. I love eating them with baked marshmallows on top :)
