Hold onto your hats everyone- the next two weeks are going to be a little crazy!
In between the mountains of homework, research papers and finals that overtake college life this time of year, I’ve also got lots of fun stuff on the agenda: a visit from my parents this weekend, Mike’s multi-day birthday celebration next week, and a huge Christmas party next weekend (which I’m preparing the desserts for!). It’s definitely going to be an eventful end of the semester!
In class this afternoon, I snacked on an unpictured chocolate peppermint stick Luna bar. Since I still haven’t gone grocery shopping (and probably won’t until tomorrow afternoon), I picked up an easy dinner at the Space Market on my way home.
Two spicy vegan “chicken” salad pitas with a few pickle spears.
Pineapple for fruit.
And a little dark chocolate action, courtesy of Yelena and my Chocolate Show swag bag.
I also broke into the remaining Frog’s Hollow Farms dried peaches I received at Foodbuzz.
They were just begging for some peanut butter dippage J
Homework time!
What’s the busiest time of year for you? How do you stay balanced during those crazy weeks?

This is a crazy busy time of year for me too...SO much grading!!
I love that sweet riot chocolate!
The holiday season is definitely the busiest time of year for me. It is so easy to become overwhelmed and let all healthy intentions go by the wayside. Instead, I take time out of every day to do something for me... whether it be reading a couple chapters of a book, working out,or cooking, it helps to include normal, calm tasks in your daily life. In terms of food, i definitely indulge as much as Iwould like, but always balance it out with a lighter "next" meal.
You have got a few busy weeks ahead of you!! I think now is the most busy time of year for most people. I just make sure to get my work-out done first thing in the morning because I know I will be so much happier and so much more productive all day because of it.
The beginning of the year is the busiest - lots of people wanting to carry out their New Years resolutions! I hope I can help people stick to their goals!! x
good luck! its about to get mad crazy over here as well
How do you have peaches left?! The only thing I have left from Foodbuzz is a packet of decaf coffee I "borrowed" from our hotel room :)
This is definitely my busiest time of year - end of the quarter madness, I know it well! And this year I also have work, on top of school!
Good luck with this week and the few weeks to come - just think though, in a few short weeks you (well, we) will be back home, relaxing -will be so nice!! :D
oooh - dried peaches + pb sounds amazing!! Although i'm sort of jealous of the dried peaches at all - I've never seen them!
So crazy how few days there are until Christmas - only 3 weeks between it and Thanksgiving this year!
SO much fun coming up! you should probably add "date with julie" to the list ;)
i lovvvvvvvve me some sweet riot!
The busiest time of the year for me is the first few weeks in November. I always have an evaluation (done by my principal), report cards, and parent teacher conferences to prepare for. It's a little hellish, and I"m so glad it's over!!!
One of these days I simply must try one of those vegan pitas. They always look so good on your blog. I think December is pretty crazy; NOT looking forward to final papers/projects/exams.
Those pitas always look so good! This time of year is always crazy for me too, but it's my favorite time of year so I don't mind spending my days in the library.
The pitas look wonderful, I've got to try those! Lately I've just been very busy in general and this time of year is always busy. I have a long to do list and try to handle one thing at a time ... try. :-)
Mmmm. All of your eats sound amazing! I really need to eat more vegan food - It looks so good!:D
Just catching up on blog reading....LOVE your new layout!!
I hear you..holidays are sooo busy! Just stay caught up on your zzz's so you don't get sick :)
My busiest time of the year was definitely my senior spring! I know thats not how it normally works but balancing my thesis, my sport, my normal class work, my friends, and my boyfriend was a HUGE challenge. I pretty much cut out sleep a bit :-) Not the healthiest option but I didn't want to miss out on anything! I didn't cut out toooo much sleep I just went from sleeping 8-9 hours a day to 6-7 (which is average for lots of people!)
Love the layout!!!
I hear ya on being busy...life is crazy over here too. Not sure how to stay focused...one day at a time I guess.

Girl, you've got me craving Cheerios like MAD!!!!
And just stay calm and do one thing at a time.. things will get done and you'll make it through! And having some fun things mixed in doesn't hurt!
you have a very full plate...as do i these days! only about 1/20th of my life makes it on my blog. the rest is just too insane for words.
i just try to remember that this too, shall pass
love the new header! and if only i could read what it all said, id be in biz :)
woah dried peaches sound awesome! and every time you get those pitas I drool! I just try and smile.. and ORGANIZE!
Right before a studio review is definitely the busiest time of year for me, which would have been this prior week. I can breathe for the moment, but I still have to finish a few projects. Yikes. It's nice to know that Christmas break is just over a week away!
i always want those pitas when you have them!!!!
ahh yes I remember the crunch time! you will get through it! just keep that chcolate right by your side haha just kidding!!!
dried peaches are SO good!!!
Aww, hang in there! My busiest time is the end of the school year - my kiddos are crazy and there is so much grading and assessment to be done before summer. I just keep thinking about the light at the end of the tunnel!
I ate those peaches with almond butter...soooo good!
It may be crazy, but this is undeniably the best time of the year!! :D I remember how tough it was finishing up the fall semester around this time when all I wanted to do was shop and eat cookies hahaha. This year isn't much easier, though, with the plans to relocate (EEEK!!).
I'm sure you'll get everything done soon enough :) TTYS!! xoxoxox
This is definitely a busy time for me too! So many papers and exams to do! I try to stay balanced by making time to work out and by not staying up too late. I stay a lot more sane when I'm well rested!
Good luck with all your work!
The busiest time of the year is probably back to school time. Prepping for the year, moving in to my apartment, getting classes started and seeing friends wears me down! This year was my last back-to-school year though. I will miss the craziness!
Good luck with getting everything done! The weeks will fly by, I'm sure... then it's vacation again!
I'm on grad school, so I feel your pain! I make a list of things I'm looking forward too during break (family, friend time, Holiday movies, sleeping in, baking) right beside my school to-do list so I always see the good with the bad!
Good luck on your finals! :)
I saw those vegan chicken pockets and i was surprised ot see they were only 170 calories each...it seems completely off base...each looks atleast 300 or so. anyway, i decided not to get them because i wasnt sure if one would be enough and also because I am watching calories cause of holiday weight gain. anyways, good luck with finals!
