Bonsoir mes belles! I hope you’ve all had a wonderful weekend! Whenever I miss a day of posting, I feel like I have so much to catch up on. It was a pretty productive weekend, so I’ll give you the speed version!
My friend’s 21st birthday party Friday night was a lot of fun! I saw a bunch of people haven’t seen since graduating nearly two years ago, which is always nice.
My vegan dream bars were a hit! I got the original recipe from Skinny Bitch in the Kitch, but made plenty of modifications:
Chocolatey Vegan Seven Layer Bars
(adapted from Skinny Bitch in the Kitch)
16 crushed vegan sandwich cookies (I used Newman’s Os)
¼ cup melted coconut oil
1/3 c turbinado sugar
¾ c natural peanut butter (I used Trader Joe’s
12 oz package vegan chocolate chips, divided (I used Trader Joe’s)
½ c slivered almonds
½ c chopped walnuts
1 c shredded coconut (sweetened or unsweetened, depending on preference)
1 can light coconut milk
¼ c agave nectar
2 T arrowroot powder
- Preheat oven to 350.
- Thoroughly combine cookie crumbs, coconut oil and turbinado sugar and press into the bottom of an 8x8 inch pan. Refrigerate for 5-10 minutes.
- Melt peanut butter by heating in microwave for 45 seconds at 50% power. Drizzle over cookie crumb mixture.
- Melt half of the chocolate chips (I used the microwave on 50% power again, stirring frequently), and drizzle over peanut butter.
- Sprinkle slivered almonds, then coconut, then walnuts, then remaining chocolate chips over base.
- In a separate bowl, combine coconut milk, agave and arrowroot powder. Pour evenly over other ingredients.
- Bake at 350 for 40 minutes, or until coconut milk is set.
- Wait until completely cooled before cutting, and store in freezer for best results.
On Saturday, I spent an easy hour on the elliptical (resistance level 1) while catching up on my reality TV, then spent the rest of the day addressing my brother’s wedding invitations and organizing my room (yes, still). Eats included:
TJ’s High Fiber cereal, fresh raspberries, almond milk
Crack wrap with Daiya, Sabra spinach artichoke hummus and tomato, plus a cinnamon topped apple and some almonds
Millet puffs in almond milk
I went to Mike’s house for dinner, where we had grilled pizza, roasted veggies and salad. For dessert, we experimented with his mom’s Vitamix to make an amazing smoothie of green apple, mango, pineapple, spinach and raspberries:
After seeing this thing in action, I finally understand the obsession! Our blender is actually on its last legs, but when I mentioned a Vita to my dad, he just laughed at me. In my dreams, I guess.
Breakfast was something different this morning, since my blueberry almond loaf needed to be finished:
With Naturally More vanilla almond butter, TJ’s strawberry preserves, and a banana
It was raining when I went to church, but by the time I got home it was starting to clear up. I headed out in hopes of accomplishing ten miles, but returned after a mere three because my bad knee was bothering me. It didn’t hurt, it just didn’t feel right...I felt like my body was just begging me to stop pushing it, so I did. To be completely honest, I’m having serious second thoughts about my half this coming Saturday. I’ve completely under prepared for it, skipping runs because of sickness, weather and general lack of motivation, and I don’t want to get discouraged halfway through when I realize that I’ve gotten slower, not faster in the last month. It’s my own doing, but I feel like I was overzealous in signing up for another race so soon after my first, without any breaks from training in between. I want to be excited for a race, not dread it, and in retrospect I definitely should have given myself a more time to get motivated again.
Lunch was a huge salad with lettuce, cucumber, tomatoes, carrots, heaps of Daiya cheese and salsa. I also had a huge bowl of strawberries with chocolate sauce:
This afternoon I went to a tasting for my brother’s fiance’s bridal shower, where I nibbled on some fruit, green salad and a cannoli. Most of the dishes were meat or egg based, so when I got home I ate an unpictured apple with peanut butter while cooking up a storm.
First, I got adventurous and improvised a batch of coconut butter cookies, which turned out delicious but way too crumbly. I’m going to see if I can tweak the recipe a bit before sharing it, but they definitely lived up to the coconut butter name!
I also whipped up some homemade babaghanouj and pita chips from The Candle Café Cookbook as a dinner appetizer:
And roasted some veggies in EVOO and sea salt to serve as a side dish:
My parents had a Kashi pizza with meat on it, so I opted for some TJ’s black bean soup instead, which I doctored up with tomatoes, hummus and salsa:
And dessert was a coconut butter cookie, an apple and a Trader Joe’s dark chocolate stick:
Tonight’s agenda includes sitting on the couch with tea, Google reader, and some mindless TV. Perfect way to end a week. Have a wonderful Monday, loves!
Have you ever lacked motivation before a race? What did you end up doing- pushing yourself through, or withdrawing? I don’t really want to bow out, but at the same time I don’t want to dread something that’s supposed to be fun!
PS- Several of you asked where I got the sundress in my last post. I bought it at Ralph Lauren Rugby last year, and while it’s not still available, there’s a similar one here.

I've never run a race before, but I do tend to get overzealous with a lot of things. If you're having second thoughts about the race, there's nothing wrong with bowing out, especially if your body is giving you signals that it might not be the best thing to do. Aches. Sickness. Disinterest. Not exactly the kind of signs that point to go.
There will be plenty of more races in the future, so there's nothing wrong with missing this one. The point is to have fun; to do it because you WANT to, not because you feel like you HAVE to.

oh G! I want to give you SO MANY HUGS right now! I am ridiculously proud of you for honoring your body and responding accordingly!! Don't spread yourself too thin. There's a huge difference between being "lazy" and being "rational"..k? Don't forget that!! Go with your gut!!!
p.s. I set out to buy coconut oil today in your honor, to no avail :( do you find yours in the regular grocery store or specialty place? I want it so bad! Especially with this recipe you just posted. **swoon**

Glad you had fun! Usually if I am not looking forward to a race it is because I am drained physically and/or mentally and it is not a good time for me to race.
That's really impressive that you're so in touch with how your body feels and what it needs! That's something I'm still working toward. Also, that 7-layer bar recipe looks fantastic and I'll have to try it soon!

I definitely have opted out of races when I felt my body couldn't take it because it isn't worth getting injured and not being able to run at all for the next few months. But just listen to your heart lady!
You and your baked goods get me every time!! And as far as the race goes I think if things don't feel right, I would definitely say to skip it and set your sights on another one. It's not quitting, it's doing what's right for you!

i usually think of races/physical challenges in two categories - 1. are you at risk to hurt yourself? if so, skip it! you're worth more than that. 2. are you just scared? if so, i never regretted pushing through fear and conqueroring something. but ONLY if you won't hurt yourself. take care, girl!
You look beautiful in those party pictures! Do whatever the bod is telling you to do for next Sunday's race. There will be other races, always, and your long term well being is more important than any race!

Lack of motivation I think comes to us all. Things to get back into 'game' face zone, try to remember why you wanted to do the race in the first place? Remember to do things for yourself that make you happy! Listen to your body is key :) And listening to good music helps ;)
I've never competed in a race, but I have entered one. I was totally unmotivated on the day of my first ever 5K, and I didn't go. I'm really disappointed in myself, but it was really just because I was nervous about going. You have completely valid reasons for not racing, but I would wait until race day to really see how you feel. Who knows - you could do it and end up with a new PR. Listen to your body!

when i was a kid, my FAVE thing my mom made, well one of them, was 7 layer bars! i was JUST THINKING about them last week. And with the chaos of life right now, i didnt do anything about sourcing a vegan and GF version, but...here you are with a vegan version! My mom's had butterscotch chips i am pretty sure too and i wonder if i would miss that "signature" ingredient but hot damn yours look great!

One of the most important and powerful parts of knowing and honoring your body is knowing that it's okay to say no. And okay to back off. And if you're really dreading doing something, then maybe it's the time to take a break!

Oh that baba ganhouj looks to die for! I have been looking for daya, but I don't think they have made it to OK yet. Oh, and I think I need to break down and get some more strawberries in the house so that I can whip up some chocolate sauce to go on them. That has been tempting me for too long!

As for your question about races, I've honestly never ran a race so I can't help. Maybe someday I'll man up and do one, but for now I'm content running around the neighborhood with my puppy.
Those roasted veggies look delish. I keep waiting for good asparagus in the grocery stores but so far there's nothing...
It seems like you're making the right decision with the race. You hit the nail on the head when you said that you should be EXCITED for a race...not dread it!! I love your healthy mindset towards running =)

if i am not up for it i woulc DEF pull out of a race...it is more important to listen to your body and do what youfeel and most importantly do what you WANT then just stay in for other reasons, ya know??

i totally have no motivation right now to do anything because i'm sick too. im trying to rest so i can get better fast and get back into the groove of things. i think you should do the run though girl. the feeling of completing it despite time or anything is a good feeling. do whats best for you though. if you're not up for it, dont force yourself.

Good luck getting motivated, I know you can do it girl, just be careful and don't hurt/over exert yourself if your knee isn't feeling right. You can do it!
I've had some injuries and just 'falling off the waggon's before races. Don't worry about it; your body is capable of so much more than you think! Just be patient and enjoy the saine life!

About the race, there's nothing wrong with opting out of it. What's important is that you do what feels right for you! There will be plenty of other races to do in the future when you feel more up to it. :)

As for the race, I can definitely see how it would be easy to get caught up in the race excitement! What if you just went in with the mindset of no expectations at all?? Don't go in thinking you have to beat your previous time; look at it as a training race and then sign up for a race later this summer or early fall when you have more time to build back up your motivation and get in more miles.

How nice of you to help out with wedding invitations! I remember doing them all myself for my wedding, and HATING every minute of it.
I think it's great your listening to your body about running. I pushed myself though a marathon once in college and barely lived to tell about it. Okay, that's an exaggeration, but it was an awful experience and it made me have to give up running for a LONG time. I had to nurse a stupid injury that it caused for almost a year!! Lesson learned.
